- Roll cookie dough into a ball. Roll ball out on a lightly floured surface into a 12 to 14-inch circle. Transfer circle to a baking sheet and bake 10 to 12 minutes, until golden brown. Remove from oven and top with preserves, strawberry "pepperoni" and white chocolate.
SUGAR COOKIE CRUST FRUIT PIZZA
Steps:
- For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
- For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
- For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
- To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

Steps:
- Make the cookie crust:
- In a medium bowl, combine flour, baking soda, cornstarch, and salt until well mixed.
- In the bowl of your stand mixer (or a large bowl with a hand mixer) beat butter and sugar until light and fluffy, approximately 3-5 minutes. Scrape bowl as needed.
- Beat in eggs, one at a time, followed by vanilla, until well incorporated. Slowly mix flour mixture into butter mixture, scraping down the sides of the bowl as needed. Cover bowl and place dough in fridge to chill for 30 minutes.
- Preheat oven to 350°F and line a large cookie sheet with parchment paper. Roll the dough into a circle, approximately 3/8 inch thick, and place on the prepared cookie sheet. Bake at 350°F for 16-20 minutes or until edges are firm and just beginning to brown. Let cool on pan for 3-5 minutes before carefully removing to wire rack to cool completely.
- While the cookie is cooling, add the coconut to the cookie sheet you just used for the cookie base. Toast the coconut for 5-7 minutes at 350°F or until golden, stirring halfway through to avoid burning. Set aside and let cool until you're ready to assemble your pizza.
- Make the cream cheese topping:
- Beat butter and cream cheese for a full three minutes until pale and fluffy, then beat in powdered sugar, one cup at a time, until a thick frosting comes together. Beat in drink mix, followed by half and half.
- Assemble:
- Spread the cream cheese topping in an even layer over the entire cookie. Sprinkle toasted coconut over the entire cookie pizza, and arrange sliced strawberries as desired across the top.

MR. FOOD CHOCOLATE CHIP COOKIE PIZZA
I finally found this recipe after looking for it for years! I used to make this for my boys on their birthdays but switched to cinnamon rolls after I misplaced the recipe. I top it with re-whipped store bought frosting and mini m&m's. Printed in the winter 1998 issue of Mr. Food's Easycooking and posted here so I won't lose it again!

- preheat the oven to 170 degrees. Grease and line a 9 inch pizza pan. Alternatively, cover a large baking tray with foil and pray with cooking spray. you want the foil to round slighly so you can create the cookie shape with the batter.
- melt your butter in the microwave. once fully melted stir in your sugar until fully incorperated then and you vanilla. Add your egg and egg yolk to your mixture. once you have done this you will need to stir in your flour, you should get a thickish kind of batter( a sloppy cookie dough) now you can add your chocolate chips
- place mixture in the pizza pan or on you foiled baking tray. if you are putting your batter onto a tray try and make it as rounded as possibe. bake for 15 to 20 minutes, until its no longer batter in the middle be cafeful not to over bake and then it will become hard once baked leave on the tray to cool and prepare your toppings.
- melt milk chocolate in the microwave or in a bowl over a pan of simmering water. top your cookie will the melted chocolate, be sure to leave a 'crust around the edges' Then melt your white chocolate in a seperate bowl and pipe or drizzle the white chocolate over your cookie to act as the 'cheese' you don't have to wait for the cookie to be completely cool before topping.
