LIGHT OVEN-FRIED CHICKEN

- In a shallow bowl, combine the first seven ingredients. In another shallow bowl, combine egg whites and milk. Place flour in a third shallow bowl. Coat chicken with flour; dip in the egg white mixture, then roll in cornmeal mixture. , Place in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 350° for 40 minutes. Spritz with butter-flavored spray. Bake 10-15 minutes longer or until chicken is golden brown and crispy and juices run clear.

- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
- Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

- Prepare the baking sheet by covering it with parchment paper.
- Whisk together the buttermilk and egg whites.
- In a shallow dish, combine the flour, cornmeal, 1/2 tsp salt, black & red peppers.
- Sprinkle the remaining 1/2 tsp salt on the chicken. Dip chicken in the buttermilk mixture, then the flour mixture.

- 1. Arrange chicken on a foil-lined baking sheet. Salt chilcen on both sides, to taste. Brush boths sides of the chicken with the melted butter.
- 2. In a large zip bag, mix the flour, salt, pepper, garlic powder, onion powder and paprika. Dredge a couple pieces of the chicken at a time in the flour mixture. Place coated chicken back on the baking sheet and bake at 350 degrees for 45-60 minutes, until the chicken is cooked through.
- 3. You can use whatever pieces of chicken you prefer, just remember, you may have to adjust the cooking time accordingly. You will sear that this is fried chicken!

- Whisk buttermilk, oil, hot pepper sauce, mustard, garlic, 1 tsp salt and 1/2 teaspoon pepper in a large bowl.
- Add the onion and then the chicken turning to coat each piece with the marinade.
- Cover; chill at least three hours or up to one day turning the chicken occasionally.
- Combine breadcrumbs, cheese, flour, thyme, paprika, cayenne and 1 tsp salt in a large baking dish.
- Remove the chicken from the marinade and roll in the breadcrumb mixture.
