Quick Cottage Cheese image

Steps:

  • Pour the skim milk into a large saucepan and place over medium heat. Heat to 120 degrees F. Remove from the heat and gently pour in the vinegar. Stir slowly for 1 to 2 minutes. The curd will separate from the whey. Cover and allow to sit at room temperature for 30 minutes.
  • Pour the mixture into a colander lined with a tea towel and allow to sit and drain for 5 minutes. Gather up the edges of the cloth and rinse under cold water for 3 to 5 minutes or until the curd is completely cooled, squeezing and moving the mixture the whole time. Once cooled, squeeze as dry as possible and transfer to a mixing bowl. Add the salt and stir to combine, breaking up the curd into bite-size pieces as you go. If ready to serve immediately, stir in the half-and-half or heavy cream. If not, transfer to a sealable container and place in the refrigerator. Add the half and half or heavy cream just prior to serving.

I prefer this Amish pie with a graham cracker crust, but my family always used the pastry crust. Since this recipe makes 2 pies, try one of each. Ricotta cheese may be substituted for the cottage cheese.

Steps:

  • Preheat oven to 425º F.
  • Place cottage cheese in strainer and let drain for about 1 hour or until most of liquid has been drained.
  • Combine all ingredients except egg whites; mix well.
  • Beat egg whites until firm.
  • Fold into batter until smooth.
  • Pour into pie crusts.
  • Bake for 15 minutes then reduce oven to 350º and bake for an additional 25 minutes or until knife inserted in center comes out clean.
  • Cool on racks.
  • Refrigerate.
  • Flavor improves if served a day after baking.

Steps:

  • Grease and line a 7" round cake pan with parchment paper. Preheat oven to 350°F.
  • Whiz cottage cheese in food processor until smooth.
  • Whisk together cottage cheese, yogurt, flour, sugar, salt and eggs until well combined. Add lemon juice and strawberries and stir well.
  • Pour batter into prepared tin and bake 30-40 minutes, until just set.
  • Let cool at least 30 minutes. Serve hot or chilled.

3/4 cup cottage cheese
2/3 cup low-fat plain yogurt
1 tablespoon flour
2 teaspoons Splenda sugar substitute
1/4 teaspoon salt
1 egg
1 egg white
1/2 lemon juice
