COUNTRY CRUST SOURDOUGH BREAD

For many years, I've been making 45 loaves of this bread for an annual Christmas bazaar, where we feed bread and soup to over 300 folks. - Beverley Whaley, Camano Island, Washington

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the Sourdough Starter, eggs, sugar, oil, salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in 2 greased 8x4-in. loaf pans. Cover and let rise until doubled, about 45 minutes. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool. Brush with butter.

COUNTRY CRUST BREAD

This is a beautiful white bread that I got off of a Homesteading Today website. This is sooo easy to make, better than store bought bread, and makes 2 loaves. Very versatile bread that has many possibilities.

Steps:

  • Dissolve yeast in warm (105-115 degree)water, let stand for five minutes.
  • Add sugar, salt, eggs, 1/4 c oil, and 3 cups of flour. Mix well, and gradually add the remaining flour.
  • Turn out onto a floured surface and knead until smooth and elastic.
  • Form into ball and place into a well greased bowl. Cover and let rise until doubled (1 1/2-2 hours).
  • Punch down, divide in half and shape into two loaves and place in well greased pans.
  • Grease tops, cover and let rise until doubled.
  • Bake at 375 for 30-35 minutes.
  • Remove from pans and brush with melted butter.
  • A few tips:.
  • For a quick rise: When you start the yeast to bloom, turn your oven on to the lowest setting. When yeast is bloomed, turn oven off. After placing the dough into the bowl, cover loosely with plastic wrap and place in the warm oven. It took mine 1 hour to double. Do the same thing after punching down and shaping the dough.
  • Make sure to really oil the pans well, including the lip of the pans, or they will stick.

  • To make the dough: Pour the water into a mixing bowl. Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Add the yeast and white whole wheat flour and let sit for several minutes until the mixture begins to bubble. , Stir in the salt and 1 cup of the bread flour and mix well. Gradually add the remaining bread flour until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a lightly floured surface and knead it for 4 to 5 minutes. Let the dough rest while you clean out and grease your bowl; then knead the dough a few more minutes. The dough should be on the slack side and a little tacky, but shouldn't be sticky. When the dough is well-kneaded, place it into the prepared bowl, cover, and let rise until doubled in size, 1 1/2 to 2 hours.
  • To use a brotform: When your dough has risen, flour your brotform heavily and sprinkle some seeds (sesame, flax, caraway, poppy...) or some rolled oats or rye flakes into the bottom. Gently deflate the dough, shape it into a ball and place it, smooth side down, into the brotform. Drape the dough with lightly greased plastic wrap and set it aside to rise for 45 minutes, or until it's crowned nicely over the rim of the brotform., If you're not using a brotform, simply round the dough into a ball and place it on a lightly greased or parchment-lined baking sheet. Let the dough rise for about 45 minutes, or until it's noticeably puffy., For dough shaped in a brotform: Have a lightly greased or parchment-lined baking sheet ready. Very gently, roll the dough from the brotform onto the baking sheet. It should slip out gracefully, without deflating. If it deflates totally (a small settling is OK), simply form it into a smooth ball, put it back in the brotform, and let it rise again (only this t
