MUSHROOM CREAM SAUCE

Steps:
- Melt butter in a saute pan over low heat. Add garlic and sage. Season with salt and pepper. Add the mushrooms, cook 5 minutes until slightly softened. Pour in cream and heat slowly. When the sauce has reached a velvety smooth consistency, remove from stove. Stir in leek and serve immediately with chicken Marsala ravioli.
COGNAC CREAM
Steps:
- Heat the milk in a medium stainless-steel saucepan over medium heat and bring almost to a boil. Remove from the heat.
- Beat the egg yolks and sugar on medium-high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 5 minutes. With the mixer on low speed, sprinkle on the cornstarch. Beat on medium-low speed until combined, scraping down the bowl with a rubber spatula.
- With the mixer on low speed, slowly pour the hot milk mixture into the egg mixture. Pour the mixture back into the pan. Cook over low heat, stirring constantly, until the mixture thickens, 5 to 7 minutes. (Pay attention because it will thicken and then quickly become scrambled eggs!)
- Immediately, pour the mixture through a fine sieve into a large bowl. Stir in the vanilla, Cognac, butter, and heavy cream. Place plastic wrap directly on the custard and refrigerate until cold.
BALSAMIC CREAM SAUCE
The vinegar and cream go very well together. Best when sauteed chicken and asparagus is added to the mix. I use this sauce on pasta all the time.

- Heat olive oil and butter in a saucepan over medium-low heat. Stir in the onion, and cook until it has caramelized to a dark, golden brown, about 15 minutes. Stir in the balsamic vinegar, and cook for 1 minute before stirring in the chicken bouillon and cream. Bring to a simmer, then remove from the heat and stir in the Parmesan cheese until melted.

BASIC ITALIAN WHITE CREAM SAUCE (LIKE AN ALFREDO OR BECHAMEL)
This recipe is for a basic Italian White Cream Sauce (like an Alfredo or bechamel) for Pasta, Chicken, Shrimp, etc. You can add other ingredients to suit your liking, this is the basic version - goes great over Fettuccine or Tortellini... you can also add 1 teaspoon oregano or parsley to flavor. If you throw in some bacon, carmelized onion & a handful of frozen peas & serve over pappardelle it is absolutely fabulous!

STEAK AU POIVRE WITH COURVOISIER SAUCE RECIPE - (3.6/5)

- SAUCE: Place the butter blend*, shallots and ground black pepper in a saucepan over moderate heat. Saute until shallots are translucent. Add the cognac to the pan and boil until the sauce is reduced to a glaze. Add the beef broth and simmer until the mixture is reduced by half. Add the cream and simmer, stirring occasionaly until the sauce is slightly thickened and barely coats the back of a spoon. Prepare a roux by melting the 2 tablespoons butter in a separate saucepan. Stir in the 2 tablespoons flour until the mixture forms a thick paste. Place the roux in a mixing bowl, add 1/4 cup of the hot sauce and whisk until it forms a paste. Add the paste to the hot sauce and whisk thoroughly to remove any lumps. Bring back to a boil. Reduce the heat to simmer and cook for 15-20 minutes, stirring occasionally. Taste to make sure no flour taste remains. DO NOT ADD MORE ROUX OR FLOUR. If necessary, continue to simmer until the sauce is reduced to the desired consistency. STEAKS: Dredge the steaks in the cracked peppercorns, coating both sides. In a large skillet over medium high heat, add oil to lightly coat the bottom. Sear the meat on both sides to the desired doneness. Serve immediately and pour desired amount of sauce over each steak.
EASY CREAM SAUCE
This sauce is so quick and delicious! It can accompany any meat, fish or veggie medley! It's so rich, noone would know it was so cheap.

- In a large pan, melt all of the butter.
- Add the cream cheese and the chicken broth.
- While stirring the sauce, bring sauce to a boil for a minute.
- Don't burn the sauce!
- Simmer for 2-5 more minutes.
- Serve atop any meal; it's delicious!
