COUSCOUS WITH TOMATO AND ONION

Steps:
- Heat two tablespoons of oil into a non stick frying pan, on medium heat. Add the onion and saute for 5 minutes, stirring often, until softened, but not coloured.
- Stir in tomato paste and sugar, and cook for 1 minutes. Add tomatoes 1/2 tsp salt and fresh ground pepper, and cook for another 3 minutes.
- Meanwhile, pour the boiling water over the couscous in a shallow bowl and cover with plastic wrap. Let stand for 10 minutes. Fluff the couscous at the end of the 10 minutes, adding the tomatoe sauce mixture.
- Clean the fryin pan and add the remaining 1 tablespoon of oil with butter, over medium heat. Add the couscous, once the butter has melted, and using the spatulas, flatten the couscous, and heat until a crisp edge develops over the base and sides.
- Carefully invert the couscous onto a plate, by placing a plate over the top of the couscous, before inverting, releasing the couscous from the pan. Serve warm or at room temperature.

COUSCOUS SALAD WITH TOMATOES AND MINT

- Toss the tomatoes, cucumbers, and lemon juice in a bowl with 2 teaspoons of the salt. Set aside.
- Put the couscous into a large bowl. Bring the water, lemon zest, 3 tablespoons of the oil, the remaining salt, cayenne, and herb stems to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes. Remove the zest and herb stems and fluff with a fork.
- Add the tomato mixture, scallions, mint, parsley, and pine nuts. Drizzle the remaining oil over the salad, toss and serve.

PEARL COUSCOUS WITH TOMATO SAUCE

- Cook 1 1/2 cups pearl couscous in boiling salted water, 4 to 5 minutes; drain. Cook 1 small diced red onion, 3 chopped garlic cloves and 1 teaspoon chopped rosemary in olive oil in a large skillet over medium-high heat until softened, 4 minutes. Add 1 cup packaged strained tomatoes, 1/4 cup water and 1/2 teaspoon kosher salt. Simmer until thick, 5 minutes. Stir in the couscous and 1 tablespoon chopped parsley; season with salt and pepper. Top with more parsley.
TOMATO AND COUSCOUS SOUP
This tomato soup is nutritious, delicious, easy-to-make and ready in just over 30 minutes. Serve hot, room temp or even cold. Use vegetable stock to make it vegetarian/vegan. This has been adapted from a Julie Le Clerc recipe.

- Heat oil in a large saucepan. Add onion and cook over moderate heat until onion is softened (about 10 minutes).
- Add the cumin and garlic, and sauté for 1 minute.
- Add tomatoes, tomato paste and stock. Bring to a boil, then reduce to a simmer for about 15 minutes.
- Add couscous and simmer for a further 5-10 minutes, or until couscous is tender.
- Season with salt and pepper and serve garnished with fresh coriander (cilantro).

- Cut away cores of tomatoes. Cut tomatoes into 1/4-inch cubes. There should be about 3/4 cup.
- Heat 1 tablespoon butter in a saucepan and add onion. Cook, stirring, until wilted. Add saffron and stir. Add tomatoes and cook about 2 minutes, stirring. Add salt, pepper and water and bring to boil.
- Add couscous, stir and cover closely. Remove from heat and let stand 5 minutes. Stir in coriander and remaining 1 tablespoon butter and serve.

This is another great recipe from Moosewood. This is quick, easy and yummy. You can try it with other pasta shapes too. Add feta to the top and serve with tomatoes and balsamic vinegar.

COUSCOUS WITH CHICKEN AND TOMATOES

- Peel and trim the vegetables.
- Fry the chicken pieces in half the olive oil until lightly browned.
- Add the sliced onion and the chopped garlic, the tomato purée and enough water just to cover the chicken.
- Season generously and simmer for 10 minutes.
- Add the cooked chick peas, the carrots, cut into batons (lengthwise into quarters), and the tomatoes, cut into 8 pieces each.
- Mix the couscous with its own volume of water and the remaining olive oil.
- Stir it and leave it to swell up for about 15 minutes.
- To cook: place it in a colander or sieve over a pan of boiling water (traditionally its done over the stew but this can be hazardous), steam for 20-25 minutes until swollen and cooked through.
- To serve: stir a knob of butter into the couscous and pile in a ring around a large dish.
- Spoon the chicken and vegetables into the centre of the dish and pass the sauce separately.
- It can have a little chili added to give it extra pungency.
COUSCOUS WITH ZUCCHINI AND CHERRY TOMATOES

- Heat oil in heavy large saucepan over medium heat. Add onion and sauté until tender and golden, adding water if dry, about 6 minutes. Add garlic and sauté 1 minute longer. Add broth. Bring mixture to boil. Add zucchini and cook until crisp tender, about 3 minutes. Mix in thyme, then couscous and butter. Remove from heat. Cover and let stand until broth is absorbed, about 10 minutes.
- Fluff couscous with fork. transfer to serving bowl. Mix in tomatoes and serve.
COUSCOUS WITH SWEET POTATOES AND YELLOW SQUASH
I've forgotten where this came from, but I have had it for about 10 years now. It is great for vegetarians, and even for non-vegetarians! I am posting the original recipe which calls for Turmeric, but I have never added it and it still tastes delicious. Other changes I have tried include using diced tomatoes (instead of whole), baby carrots instead of a regular carrot. Also I have microwaved the sweet potato for about 5 minutes prior to peeling and cubing, just to cut down on cook time. All of these changes have worked out well.

- Use fork to break up tomatoes in the can and set aside.
- Cut sweet potato in 1" cubes. Peel carrot and cut diagonally into 1" lengths. Cut squash into thick slices and set aside.
- Heat oil in large saucepan over medium heat for about 30 seconds. Cook onions until they begin to brown.
- Stir in garlic, then tomatoes, water, cinnamon, turmeric, cumin, salt and pepper.
- Add sweet potato and carrots. Raise heat and bring to a boil. Reduce heat to low, cover and cook 15 minutes.
- Add squash and chick peas. Cook 15 minutes or until sweet potatoes are tender.
- Cook couscous while vegetables simmer.
- Fluff couscous and ladle vegetables and broth over couscous.
