- Stir together apple cider and 4 tablespoons caramel ice cream topping in a 3 1/2- or 4-qt. slow cooker until smooth. Cover and cook on Low for 3 to 4 hours or on High for 1 1/2 to 2 hours.
- Mix together sugar, salt, and apple pie spice in a small shallow bowl. Pour remaining 2 tablespoons caramel topping into a small saucer.
- Dip the rims of 8 mugs or heatproof glasses into caramel topping, evenly coating the rim; then dip into spice mixture. Ladle hot cider into mugs. Add 1 1/2 fluid ounces (3 tablespoons) spiced rum to each mug and garnish with a cinnamon stick.

- In the bowl of a food processor, pulse 2 1/2 cups flour, 1 teaspoon salt, and 1 1/2 tablespoons sugar. Add butter and pulse until coarse, pea-sized crumbs appear, about 10 seconds. With the machine running, add vinegar and 1/4 cup ice water and process until the dough just holds together, about 30 seconds. Squeeze a small amount of dough between your fingers and if it is very crumbly, add more ice water, 1 tablespoon at a time (2 tablespoons maximum). Do not over process.
- Turn dough out onto a lightly floured surface and push together into a rough ball. Knead a few times to combine, then divide into two equal balls. Flatten each ball into a disc with smooth edges (no cracks), cover with plastic wrap, and refrigerate at least 1 hour (or up to overnight).
- Preheat the oven to 425°F with one rack on the bottom rung and one rack in the center of oven. Place a rimmed baking sheet on the bottom rack to preheat.
- On a lightly floured surface, roll out one disc of dough into a 13-inch round. Roll the dough loosely around the rolling pin, and then unfurl it into the 9-inch pie pan. Gently lift and settle the dough into the pan. Trim the excess dough using scissors, leaving a 1/2-inch overhang, and transfer to the refrigerator. On a floured piece of parchment, roll out the second disc of dough to the same size as the first and refrigerate both crusts for 30 minutes.
- In a small bowl, whisk together the egg and milk and set aside. Peel, core, and slice the apples into 1/4-inch thick wedges. Place apples in a large bowl and mix with 1/4 cup flour, 1/3 cup sugar, cinnamon, nutmeg, 1/4 teaspoon salt, and lemon. Fill the dough-lined pan with the apple mixture, packing apple slices as tightly as possible.
- Brush the rim with egg and milk mixture, reserving the excess. Top with the second dough round and press over apples to minimize excess space between apples and crust. Press the top and bottom crusts together and trim the top crust to a 1-inch edge around pan. Tuck top edge under bottom edge and crimp or decorate as desired. Cut five vents in the top crust for steam. Refrigerate pie for 30 minutes to set the crimp.
- Brush top crust with egg wash and sprinkle with coarse sugar.
- Place pie on the preheated rimmed baking sheet and bake until the crust begins to turn golden, 20 to 25 minutes. Rotate sheet, move to center rack, and reduce oven to 350°F. Continue baking until the crust is golden brown and you can see the thickened juices bubbling, 40 to 50 minutes more. Cool on a rack 3 to 4 hours to allow juices to set before slicing.
- Do Ahead
- The pie dough can be made up to 3 days in advance and chilled, or frozen for up to 3 months; thaw before using. The baked pie will keep, loosely covered with aluminum foil, at room temperature for up to 2 days.

- Divide the pastry almost in half and roll out the larger half on a lightly floured surface to a 13-inch circle.
- Line a 9-inch pie tin with the pastry.
- Trim the edge to 1/2-inch beyond the rim of the pie tin.
- Combine the apples, 1 cup of apple cider and the sugar in a 3-quart saucepan and cook, over high heat, until the mixture comes to a boil.
- Reduce the heat to low and simmer for 8 minutes or until the apples are tender.
- Drain the apples, reserving the syrup.
- Add enough additional apple cider to the syrup to make 1 1/3 cups.
- Return the syrup and apples to the saucepan.
- Combine the cornstarch and water in a small bowl and stir until well blended.
- Stir the cornstarch mixture and the cinnamon into the apple mixture.
- Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Remove from the heat and stir in the butter, then pour the mixture into the pastry lined pie tin.
- Roll out the remaining pastry to an 11-inch circle.
- Fold the pastry gently, so as not to tear it, into quarters and cut slits in the folds.
- Gently unfold the pastry on to the top of the filling and trim the edge to 1-inch beyond the rim of the pie tin.
- Fold the top crust under the lower crust and form a ridge by fluting the edge of the pie.
- Bake in a 400 degree F. oven for 40 to 45 minutes or until golden brown.
- Cool on a wire rack until slightly warm before cutting and serving.
- NOTE:
- This is the perfect pie to serve with the rich cheddar sauce in this file.

- Melt 40g of the butter in a saucepan and add the flour. Stir this over a medium-low heat for 1 min to make a roux. Remove from the heat and start adding the cider a little at a time. Mix well with a wooden spoon to ensure there are no lumps. Keep stirring until all the cider has been added, then add the milk in the same way. Season, return the pan to the heat and, stirring continuously, bring to the boil. The mixture will thicken considerably and, once it has come to the boil, reduce the heat and simmer for about 3 mins. Stir in the mustard, lemon juice and crème fraîche , and taste for seasoning.
- Melt the rest of the butter in a frying pan and gently fry the leeks and the apples for 5 mins. Add 2 tbsp of water, season, cover and cook over a low heat for 8-10 mins until tender. If there are lots of juices, increase the heat to reduce them.
- Add half the cheese to the sauce, then bring to the boil. Reduce the heat and gently stir in the leeks and apples and taste - you may want to add more mustard or lemon juice. Cool and chill the sauce until you're ready to assemble the pie.
- Stir the chicken into the cooled sauce. Put the mixture into a 25 x 20cm pie dish or a round dish measuring 25cm across (with a 1.3 litre capacity). Sprinkle with the rest of the cheese and leave to cool completely.
- Heat oven to 200C/180C fan/ gas 6. On a lightly floured surface, roll the pastry out to the thickness of a 50 p coin. Cut off a strip the same width as the lip of the pie dish. Wet the lip and press this strip onto it. Brush the strip with water and lay the rest of the pastry on top. Press the pastry lid onto the pastry strip, then cut off the excess. Crimp the edges and use the remaining pastry to decorate the top of the pie. Make three small slits in the pastry near the middle to let the steam escape. Brush the top with the egg mixture and bake in the oven for 30 -40 mins, until the pastry is a deep golden colour and puffed up. Serve immediately.

THREE APPLE PIE WITH CIDER RUM SAUCE
This is an exceptional pie, combining three different kinds of apples, the cider rum sauce really makes this pie wonderful. From an old Marcia Adams book. Original recipe called for Ida Red, Rome and Jonathan.. You will also need a 2 layer pie crust--recipe at bottom.

- In a medium saucepan over medium heat, boil the cider, uncovered for 25 minutes or until reduced to 1 1/2 cups.
- Remove 1/4 cup and reserve the rest for sauce.
- Place the apples in a large sauté pan and pour the 1/4 cup of reduced cider and 2 tbls of rum over the top.
- Cook, uncovered for 3-4 minutes or until barely tender.
- Combine the dry ingredients in a small bowl, then mix gently into the apples with a rubber spatula.
- Preheat oven to 375°.
- Line a 9-inch pie pan with pastry and pour in the filling.
- Dot with butter, then top with the second crust and crimp to seal the edges.
- Bake the pie for 60 minutes or until the filling bubbles up in the center.
- Cover with foil if the top begins to get too brown.
- Let pie cool to lukewarm.
- To prepare the SAUCE:.
- In a medium saucepan, whisk together the remaining 1 1/4 cups reduced cider, the rum, brown sugar, cornstarch, lemon zest, cinnamon, cardamom, nutmeg and salt.
- Over medium heat, bring to a boil, add the butter and cook for 2 minutes.
- Keep warm until ready to serve.
- Cut the pie into wedges and serve with a scoop of vanilla ice cream and a dollop of hot cider sauce.
- To prepare the PIE CRUST:.
- In a large mixing bowl, combine the flour, baking, salt and sugar.
- Add the shortening, (I use 1 cup butter flavor Crisco and 3/4 cup regular Crisco) and beat until the mixture is crumbly.
- In a small bowl, beat the egg well and add the vinegar and water.
- Pour over the flour-shortening mixture and mix for about 1 minutes till well combined.
- Form the dough into 4 balls.wrap and refrigerate overnight or at least a couple of hours.
- To make the pastry shells, roll out one of the balls of dough 1/8-inch thick on a lightly floured board.
- Roll out to fit your pie pan (this pastry is not fragile, but is it does tear, just press it together with your fingers).
- Ease the dough into the pan without stretching it and pat it firmly in place so there won't be any air pockets.

- In a medium saucepan, boil the cider until it's reduced to 1/2 cup, about 10 minutes. Transfer to a bowl and let cool. Whisk in 3/4 cup of the sugar, the sour cream and salt, then whisk in the eggs.

BOILED CIDER PIE
This is another dish I found in Ohio Magazine this month (October 2005). I can't wait to try it. The description says it's an old Vermont recipe. Boiled cider is apple cider that has been boiled down to a thick, syrupy consistency. To get one cup of boiled cider, you need to boil six cups of sweet cider. The best cider is made from a variety of different apples. One good mix is Foxwhelp (sharp and bitter), Wickson (sweet and juicy), Golden Russet (sweet and juicy) and Winter Banana (aromatic).

- Lightly spoon flour into dry measuring cups. Level with a knife.
- Combine 1/3 cup flour and ice water, stirring with a whisk until well blended.
- Combine 1 2/3 cup flour and salt in a bowl; cut in margarine and shortening with a pastry blender or two knives until mixture looks like a course meal.
- Add ice water mixture; toss with fork until moist.
- Divide dough in half. Gently press each half into a 4" circle on heavy duty plastic wrap and cover with additional plastic wrap.
- Roll one half of dough, still covered, into 12" circle and chill.
- Roll other half of dough, still covered, into 11" circle and chill.
- Filling:.
- Bring cider to a boil in a large heavy sauce pan over high heat. Cook until reduced to 1/2 cup (about 20 minutes). Cool completely.
- Preheat oven to 450°F
- Combine cooled cider, 1/3 cup sugar, corn starch, lemon juice, vanilla and pie spice in a large bowl. Stir apple slices into cider mixture.
- Remove one sheet of plastic wrap from the 12" circle; fit dough into a 9" pie plate coated with cooking spray, allowing dough to extend over edge of plate.
- Remove top sheet of plastic wrap.
- Spoon apple mixture into crust, and brush edges of crust lightly with water.
- Remove one sheet of plastic wrap from the 11" circle, and place on top of apple mixture.
- Remove top sheet of plastic wrap.
- Press edges of dough together; fold edges under and flute.
- Cut 6 (1") slits into top of pastry using a sharp knife.
- Combine egg and 1 tablespoon of water. Brush top edges of pie with egg mixture and sprinkle with 1 tablespoon of sugar.
- Place pie on a baking sheet and bake for 15 minutes. Reduce oven temperature to 350°F (Do not remove pie.) Bake additional 45 minutes or until golden.
- Cool on a wire rack.
