Steps:

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
  • Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
  • Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
  • Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.

Coconut Ceviche Recipe by Tasty image

Steps:

  • Working 1 at a time, set a coconut on its side on a cutting board. First, remove the white husk from one end of the coconut to expose the brown shell underneath. Holding the coconut in place with one hand on the rounded end, carefully use the back end, or heel, of the knife to puncture the exposed coconut shell. Do not use any force other than the weight of the knife. Do this a few times, working in a circle until you can wedge your knife into the coconut shell and pop off the top. Drain the coconut water into a bowl and reserve for another use.
  • With the cut side of the coconut up, place the knife over the opening and cover the spine (dull side) of the knife with a folded kitchen towel. Using a meat mallet or other heavy kitchen utensil, like a rolling pin, whack the knife where the towel covers it. Repeat a few times until the coconut is cracked in half.
  • With a large spoon, scoop out the coconut meat. If necessary, clean the coconut meat by trimming off any hard or woody pieces of the shell. With a sharp knife, cut the cleaned coconut meat into 1 x ½-inch (2 ½ cm x 1 ¼ cm) strips.
  • In a medium bowl, toss together the coconut meat, mango, red onion, jalapeño, lime zest and juice, coconut milk, mint, and cilantro. Season with the salt, then stir again.
  • Cover the bowl and let marinate in the refrigerator for at least 1 hour, up to 3 hours.
  • Serve the ceviche chilled with tortilla chips or in a tostada shell.
  • Enjoy!

3 young coconuts
1 cup mango, diced
¼ cup red onion, thinly sliced
2 tablespoons jalapeño, minced
1 tablespoon lime, zested
6 tablespoons lime juice
3 tablespoons coconut milk, shaken, full-fat
3 tablespoons fresh mint leaf, finely chopped
3 tablespoons fresh cilantro, finely chopped
1 teaspoon kosher salt
tortilla chip, or tostada shells, for serving

Steps:

  • In a food processor, add the flour, yeast, salt, and sugar. Pulse until incorporated.
  • While running, slowly add the warm water until the dough balls up. You may not need all the warm water.
  • Carefully push the dough back into the blade's path and continue to process for an additional 30 seconds or until the dough is firm and stretchy, but not sticky nor squishy.
  • Gently round the dough into a ball and place in a lightly oiled bowl. Cover with a damp, warm towel for an hour or until the dough has doubled in size.
  • Add the barley malt syrup to about 6 quarts of water and bring to a boil.
  • Place a tray with about 2 quarts of water on the bottom shelf of the oven. Preheat to 425°F (220°C).
  • Place the dough onto a lightly floured surface and divide into 6 equal pieces (roughly 5 ounces (140 g) a piece if you use a scale). Cover the pieces with a damp towel.
  • One at a time, form the dough into a ball, pinching the seams together at the bottom. Place the dough seam side down and-cupping your hand over the dough-apply gentle pressure, working the ball in circles until the seams on the bottom are smoothed out. Gently reshape the edges of the ball into a circle.
  • Using your thumb, press down into the center of the ball to the counter. Working in a circle, carefully stretch the dough into a ring until the hole at the center is about 2 inches (5 cm) in diameter.
  • Place the dough rings under a damp towel and let rise for 10 minutes.
  • Working in batches of two, place the bagels in the boiling water/syrup. They should float at the surface. Let them boil for 30 seconds, then flip and boil for an additional 30 seconds.
  • Remove the bagels from the water/syrup and gently pat dry with a clean towel.
  • Brush the tops with the beaten egg. Optionally, if you want toppings, dip the egg-washed side of the bagel into the mixture of your choice.
  • Place the bagels on a parchment paper-covered baking sheet. Bake until golden brown, about 15 to 20 minutes.
  • Transfer to a wire rack to cool.
  • Enjoy!

Steps:

  • In a liquid measuring cup, sprinkle the yeast over the warm water. Set aside for 5 minutes to bloom.
  • In a bowl, add 3 cups (375 g) of the flour, Parmesan, baking powder, salt, and sugar and stir to combine.
  • Add 2 tablespoons of the olive oil and stir to combine. Pour the yeast water over the flour mixture and stir until the dough forms into a ball.
  • Use ¼ cup (30 g) of flour for dusting the surface. Scrape the dough out of the bowl onto your floured surface. Knead the dough for about 10 minutes until the dough is tight. You may need to sprinkle a little flour while you're kneading if the dough is too sticky. Form the dough into a ball.
  • Pour 1 tablespoon of olive oil in a bowl. Place the dough in the bowl. 7. Cover, let rise for 1 hour in a warm area, or until the dough has doubled in size.
  • Flour the surface. Flip bowl over surface and let the dough fall out of the bowl. Divide the dough into 3 equal balls.
  • Begin forming the dough into a circle about ½-inch (1 cm) thick and 8 inches (20 cm) wide, making sure the middle of the circle is not too thin. Repeat with the other 2 balls of dough.
  • Sprinkle the cornmeal on a baking sheet. Place dough on the baking sheet.
  • Place 4 slices of pepperoni on the dough in the center. Place 4 slices of the provolone over the pepperoni.
  • Spread half of the tomato sauce around the edge of the dough. Sprinkle 1½ cups (150 g) of mozzarella over the sauce around the edge of the circle.
  • Place the second circle of dough over the first and tuck the edges underneath the first layer of dough. Repeat with the pepperoni, provolone, tomato sauce, and mozzarella. Place the third layer of dough over the second. Tuck the edges underneath.
  • Preheat oven to 350˚F (180˚C).
  • With a knife make one vertical cut in the center of the pizza, making sure you cut through all of the layers. Make another horizontal cut, then 2 diagonal cuts so you have 8 triangles to fold over. Begin folding back each layer, creating an opening in the center. Repeat 7 more times.
  • Brush the ring with olive oil and bake for 40 minutes. Cover with foil and continue to bake for 20 minutes.
  • Place a bowl filled with the rest of the tomato sauce in the center of the ring.
  • Enjoy!
