CRAB MEAT MUFFINS

This is an easy appetizer you can do ahead. Keep the mixture refrigerated until ready to use. I sometimes have the crab meat already spread on the muffins then when my guests arrive, all I have to do is pop it in the broiler!

Steps:

  • Mix together crab meat, cheese, butter, Miracle Whip, and garlic salt.
  • Cut muffins into fourths.
  • Spread mixture on muffins and broil til lightly toasted.

6 English muffins, split
1 (6 ounce) can crabmeat, drained
1 (5 ounce) jar kraft old English cheese
1/2 cup butter or 1/2 cup margarine
1/4 cup Miracle Whip
1 dash garlic salt

Crab on a Muffin Appetizers image

Steps:

  • Melt butter in skillet.
  • Add Old English cheese until all is melted.
  • Remove from heat, add mayonnaise, parsley and Old Bay.
  • Gently fold in crab meat.
  • Cut muffins in half.
  • LIGHTLY toast muffins (just until they start to toast).
  • Cut the muffins into 1/4ths, for appetizers.
  • Spread the crab/cheese mixture onto each 1/4th.
  • You may freeze at this point.
  • To cook, bake at 350°, for 20 minutes, till bubbly.
  • For luncheon, spread the mixture on the muffin half and cook as directed.

Cheesy Crabmeat English Muffins image

Steps:

  • Mix the Old English Cheddar Cheese, crabmeat, garlic powder and butter together in a mixing bowl. Salt to taste.
  • Spread the mixture over 6 english muffin halves.
  • Place coated English muffins in the freezer until firm.
  • Cut each english muffin half into 12 approximately equal pieces.
  • Place in a ziplock bag and freeze until cooked or cook immediately.
  • To cook: Cover a cookie sheet with aluminum foil. Place the pieces on the cookie sheet cheese side up.
  • Broil for 10-15 minutes or until the top is brown/ bubbly.

  • Preheat an oven to 425 degrees F (220 degrees C). Toss the crabmeat in the melted and cooled butter. Set aside until ready to serve.
  • Pat filets mignons dry and season with salt and pepper. Heat olive oil in large heavy skillet over medium-high heat until hot, but not smoking. Brown filets on both sides, about 3 minutes per side.
