CRANBERRIES IN THE SUN

Entered for safe-keeping. From Mr. Ken Jernigan, Titusville, Florida, as submitted to BH&G. What imagination to combine rice, mandarin oranges, and whipping cream, and then top it off with a cranberry sauce!

Steps:

  • Drain mandarin oranges, reserving 1 tablespoon liquid.
  • Whip cream; fold in rice, orange peel, and mandarin oranges. Chill.
  • In small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup. Cook and stir until mixture is thickened and bubbly.
  • Cool sauce to room temperature.
  • Spoon mounds of rice mixture on lettuce leaves.
  • Halve orange slices and arrange around mounds.
  • Spoon cranberry sauce on top.
