SIX-HOUR PORK ROAST

Six-Hour Pork Roast image

Steps:

  • Preheat oven to 275 degrees F.
  • Blend together sage, rosemary, garlic, fennel seeds, salt, and pepper in a food processor until a thick paste forms. With motor running, add wine and oil and blend until combined well. If necessary, trim fat from top of pork, to leave a 1/8-inch thick layer of fat. Make 3 small incisions, each about 1-inch long and 1-inch deep, in each side of pork with a small sharp knife, and fill each with about 1 teaspoon herb paste. Spread remaining herb paste over pork, concentrating on boned side, and tie roast with kitchen string at 2-inch intervals.
  • Put pork, fat side up, in a roasting pan and roast in middle of oven 6 hours. Transfer roast to cutting board and let stand 15 minutes. Discard string and cut pork roast (with an electric knife if you have one) into thick slices.

Pork Roast (6 Hour Roast) image

Steps:

  • Preheat oven to 275 degrees.
  • Blend together the rosemary, sage, garlic, fennel seeds, salt and pepper in a food processor until a thick paste forms. While the motor is running, add the wine and oil and blend until it is well combined.
  • If you desire, you can make the herb paste a day ahead, cover, and place it in the refrigerator.
  • If necessary, trim fat from top of pork, to leave a 1/8 inch thick layer of fat. Make 3 small incisions, each about 1 inch long and 1 inch deep, in each side of pork with a small sharp knife, and fill each with about 1 teaspoon of herb paste. Spread the remaining herb paste over pork, concentrating on the boned side, and then tie the roast with kitchen string at 2 inch intervals.
  • Place pork roast, fat side up, in a roasting pan, and roast in the middle of the oven, uncovered, 6 hours.
  • Transfer roast to cutting board and allow to rest 15 minutes, so that the juices have a chance to redistribute.
  • Discard the string and slice the roast with an electric knife, if you have one, into thick slices.

My Special Pork Roast image

Steps:

  • Preheat oven to 350.
  • Rub the entire pork loin with the olive oil.
  • Then take the crushed garlic and rub it into the meat on all sides.
  • Sprinkle the remaining seasonings onto the roast.
  • Add a bit of water to the bottom of your roasting pan.
  • Cover and bake for 1/2 hour, then uncover and continue to cook it until a meat thermometer registers as done.
  • By baking it uncovered, you will give the roast a really nice brown colour!
  • Enjoy!
  • **This is extra tasty if you can cook it on a roteiserie!

  • Preheat oven to 275 degrees F (135 degrees C).
  • In a large skillet over medium-high heat, brown the roast on all sides, about 10 minutes. Place roast into a large roasting pan. Pour beans, beer, and tomatoes over roast. Arrange onions, shallots, garlic, bay leaves and sprigs of rosemary around the roast, and season with salt and pepper.
  • Cover, and bake for 4 hours. Raise the temperature to 425 degrees F (220 degrees C), and roast 1 hour more.

  • In a shallow bowl, combine flour, salt if desired and pepper. Cut each tenderloin into six pieces; flatten to about 1-in. thickness. Melt butter in a large skillet. Dip pork into flour mixture; add to skillet and brown on both sides. Place in an ungreased 11x7-in. baking pan. In the same skillet, saute onion and garlic until tender.   • Place meat in roasting pan sprayed with cooking spray; brush with 1/2 cup dressing. Toss potatoes and beets with 2 Tbsp. of the remaining dressing; spoon around meat. Bake 15 min.
