CRANBERRY MULTI-GRAIN BREAD

This healthy and delicious whole grain bread takes 5-10 minutes to prepare (plus baking time). It makes the perfect accompaniment to a holiday meal or a great gift to take to a dinner party.

Cranberry Multi-Grain Bread image

Steps:

  • Mix dry ingredients (excluding dried cranberries) together in a food processor or mixer. In a separate bowl, whisk liquid ingredients together. Slowly pour into dry ingredients. Mix. Add dried cranberries and mix briefly. Pour into a greased loaf pan and bake at 350 degrees for 50-55 minutes.

Grandmother's Famous Cranberry Bread image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x5x3 inch loaf pan.
  • Whisk together the flour, sugar, baking powder, salt and baking soda.
  • Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice; stir to mix and fold in raisins and cranberries.
  • Pour into loaf pan and bake for 70 minutes or until toothpick inserted comes out clean. Remove from pan; cool on wire rack.

Cranberry-Walnut Toasting Bread image

Steps:

  • In a large bowl, combine 3 cups all-purpose flour, oats, whole wheat flour, brown sugar, salt and yeast. In a small saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in the cranberries, walnuts and enough remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide in half. Shape into loaves; place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes. Bake at 350° for 45-50 minutes or until golden brown. Remove from pans to wire racks to cool. To serve, cut into thick slices and toast.
