CREAMED TURKEY WITH SWEET POTATO BISCUITS
Though this saucy, savory creamed turkey is designed for using Thanksgiving leftovers, it can be made any time of year. It's a dish that fans of biscuits and gravy will appreciate. These biscuits are a good way to use up leftover sweet potato (or you could bake sweet potatoes for this purpose), but the turkey would also be delicious with plain freshly baked fluffy buttermilk biscuits.

- Heat oven to 400 degrees. In a Dutch oven or heavy-bottomed skillet over medium heat, cook sausage meat, breaking it into small crumbly pieces as it browns. Pour off any rendered fat. Add butter and diced onion and cook, stirring, until onion is softened, 3 to 4 minutes. Sprinkle mixture with flour and stir to combine.
- Add milk 1/2 cup at a time, stirring vigilantly as the sauce thickens. Reduce heat if sauce is bubbling too rapidly. Whisk in gravy or broth and season with salt, pepper and cayenne. Fold in turkey meat and heat through. Keep warm.
- Make the biscuit dough: Combine flour, baking powder, baking soda and salt in a mixing bowl. Add butter and work it into the dry mixture with fingers until mixture resembles wet sand. Beat sweet potato and buttermilk together and stir into flour mixture. Mix briefly just enough to incorporate to make a soft dough.
- Transfer dough to a work surface and dust lightly with flour. Knead for 1 minute, then pat or roll dough to a 1 1/2-inch thickness. Use a floured biscuit cutter or water glass to cut 10 to 12 rounds from the dough. (Or simply use a sharp knife to cut dough into 2-inch squares or diamonds.) Place on a parchment-lined baking sheet and bake for 10 to 12 minutes until golden.
- To serve, split a warm biscuit and spoon saucy turkey over it.

- Preheat the oven to 400 degrees F (200 degrees C).
- In a medium bowl, stir together the flour, baking powder, sugar and salt. Cut in the shortening until pieces of shortening are pea-sized or smaller. Mix in the sweet potatoes, and enough of the milk to make a soft dough.
- Turn dough out onto a floured surface, and roll or pat out to 1/2 inch thickness. Cut into circles using a biscuit cutter or a drinking glass. Place biscuits 1 inch apart onto a greased baking sheet.
- Bake for 12 to 15 minutes in the preheated oven, or until golden brown.

CHEF JOHN'S SWEET POTATO BISCUITS
This would be a great way to use leftover Thanksgiving sweet potatoes, but they're even better right on that holiday table with the rest of the feast. By forming and folding dough, we develop beautifully buttery layers and avoid overmixing. These were delicious with the pomegranate spread.

- Cut sweet potato in half lengthwise. Cut each in half again lengthwise, then in half cross-wise. Cut each piece in half to make about 16 evenly sized chunks. Transfer into pot; cover with water and add salt. Bring to a simmer on high heat; reduce heat to medium-low and cook until potatoes are tender, about 17 minutes. Drain thoroughly; return to pot and mash potatoes. You will need 1 1/2 cups mashed sweet potatoes. Cool thoroughly.
- Transfer cooled mashed potatoes to a mixing bowl. Add brown sugar and buttermilk. Mix together until well combined.
- Place self-rising flour in a separate mixing bowl. Grate frozen butter into flour, tossing with a fork to coat with flour after each addition of about 1/3 to 1/2 stick. This will prevent butter from clumping. Mixture should look like floury pieces of butter. Add sweet potato mixture. Toss with a fork until evenly distributed, but don't overmix.
- Transfer mixture onto a lightly floured work surface. Push and press mixture together into a rectangular shape, about 1 1/2 inches thick. Dough will be floury and a bit crumbly. Fold rectangle into thirds, lifting up one-third and folding onto the middle and doing the same with the other side. Dust with a bit of flour if sticking.
- Preheat oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with a silicone mat.
- Press dough into a rectangle again, about 1 inch thick. Repeat the tri-fold step. Press out into a rectangle, about 1 inch thick. Trim off the rough edges to square off the sides; this will maximize rising. Cut into 8 equal portions. Transfer to prepared baking pan, spacing biscuits evenly. Brush tops lightly with 1 tablespoon melted butter.
- Bake in preheated oven until browned, 20 to 25 minutes. Cool slightly before serving.
- Mix 4 tablespoons butter (room temperature), pomegranate syrup, and pomegranate juice together in a small bowl. Spread on warm biscuits. Sprinkle with a few pomegranate seeds for garnish.

- Layer sweet potatoes and turkey in 4- to 5-quart slow cooker. Mix remaining ingredients except beans until smooth. Pour over turkey.
- Cover and cook on high heat setting 1 hour. Reduce heat to low heat setting. Cook 5 hours. Stir in beans. Cover and cook 1 to 2 hours or until juice of turkey is no longer pink when centers of thickest pieces are cut.
- Remove turkey and vegetables from slow cooker with slotted spoon. Stir sauce. Serve sauce with turkey and vegetables. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

SWEET-POTATO BISCUITS
This recipe comes from the Food Section of a November 19,2008 Houston Chronicle. These would be great with your turkey dinner or with a sliced, baked ham. The recipe is from executive chef David Luna of Shade restaurant, here in Houston.

- Preheat oven to 425 degrees.
- Toss sweet potato with 1 tablespoon maple syrup; place in small ovenproof dish and bake until tender, about 15 minutes.
- Remove from oven and cool.
- Sift flour, salt, baking powder and sugar into a large bowl.
- Cut 10 tablespoons ( 1 stick plus 2 tablespoons) into pieces and, using a fork, cut into flour mixture; set aside.
- In another bowl, whisk eggs, cream, orange zest and 2 tablespoons syrup; set aside.
- With a fork, add sweet potatoes to flour mixture, followed by egg and cream mixture and just enough buttermilk to form a soft, slightly sticky dough.
- Mix until ingredients are just incorporated. Overmixing will toughen the biscuits.
- Let dough rest for a few minutes before turning it out onto a floured work surface.
- Roll out dough with a floured rolling pin to 3/4-inch thickness.
- Cut out as many 2-inch rounds as possible with a cookie or biscuit cutter dipped in flour. (Do not twist cutter.).
- Transfer to an ungreased baking sheet.
- Bake for about 6 minutes, then rotate sheet for even browning.
- Bake until crusty and golden brown, another 6 to 8 minutes.
- While biscuits are in the oven, melt the remaining butter to brush on the tops are finished.
