CREAMY SKILLET CHICKEN

- Whisk together the flour, 1 tablespoon salt and a few grinds of pepper in a pie plate or shallow dish. Coat both sides of the chicken breasts in the flour. Shake off any excess and set aside.
- Heat 3 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Add the chicken to the skillet and cook, undisturbed, until deeply golden, about 3 minutes. Turn the chicken and cook, undisturbed, until the other side is deeply golden brown, about 3 minutes. Remove the chicken to a plate. Add the remaining 1 tablespoon oil to the skillet. Add the mushrooms and cook, stirring occasionally, until they begin to brown and release their liquid, about 5 minutes. Add the garlic and cook, stirring, until the garlic is fragrant, about 30 seconds.
- Add the cream cheese and stir until melted. Then pour in the half-and-half. Use a wooden spoon to scrape any browned bits from the bottom of the skillet. Season with salt and pepper. Add the chicken back to the skillet, cover and cook, turning about halfway through, until an instant-read thermometer inserted into the thickest part of the chicken reaches 165 degrees F, 15 to 20 minutes. Transfer the chicken to a serving platter filled with warm egg noodles. Add the spinach to the skillet, cover and cook until wilted, about 5 minutes. Stir to combine and season with salt and pepper. Pour the creamy spinach sauce over the chicken and noodles.

- Combine soup, egg and seasoned salt in a bowl and set aside (soup is already salted so be careful on amount of seasoned salt you add).
- Mix together flour, cornstarch, garlic powder, paprika, salt and pepper in a resealable plastic bag.
- Dip chicken pieces into soup mixture and turn so as to coat all over.
- Place chicken pieces (one at a time) in bag with flour mixture, seal bag and shake to coat chicken (if more flour mixture is needed, add equal amounts of flour and cornstarch to bag).
- Place coated pieces of chicken on a platter and allow to set until the coating becomes doughy (this is critical to ensure crispiness when fried).
- Heat oil in a deep fryer or in a skillet over medium heat, using enough oil to cover chicken pieces when fried (you can test oil in skillet by dropping a piece of the doughy coating into the hot oil- oil is ready when dough begins frying immediately).
- Once chicken is doughy, fry pieces in oil for approx 5-8 minutes or until cooked through and juices run clear.
- Drain pieces on paper towel and serve.

- Place a baking sheet on the middle oven rack; preheat to 200˚ F. Place each chicken breast between 2 sheets of plastic wrap and pound with a meat mallet or heavy skillet until 1/4 inch thick. Season with salt and pepper.
- Put 1 cup flour on a plate. Beat the eggs in shallow bowl. Heat a large cast-iron skillet over medium-high heat, then add the vegetable oil. Coat 2 chicken breasts in the flour, then dip in the beaten eggs. SCRUMPTIOUS CREAMY & CRUNCHY CHICKEN CRESCENTS
One of my favorite dishes and always a huge hit at my dinner party/get-togethers at my house. These little 'chicken balls' are so tasty. Crunchy and crusty on the outside, and warm, savory and creamy on the inside. I love them warm out of the oven and cold out of the fridge. I use Pepperidge Farm stuffing mix, as it has more of a fine texture. Bread crumbs could also be used. I would not recommend a coarse stuffing mix (like Stove Top) with large chunks. For parties, I make the full recipe, but cut the crescent rolls in half to make them more bite-size (although they are still a good 2-3 bites each!).

- Boil chicken breasts until cooked through. Shred meat once cooked.
- In a large bowl, combine cream cheese, sour cream, and onion. Add shredded chicken and salt and pepper to taste. Mix well.

I have a severe egg allergy and growing up my mom was always looking for recipes that both her kids would like and she could make without much hassle. Similar to chicken parm but baked and not using any eggs this was and still is a family favorite. Many a night we would ask my mom for "Crunchy Chicken and 'sketti" (meaning spaghetti).

- Preheat oven to 375 degrees.
- Line the bottom of a baking dish large enough to lay out the chicken in with foil.
- Give a quick spray with a cooking spray to avoid sticking later.
- Place italian dressing in one bowl and breadcrumbs in another.
- Measurements are a guesstimate, but you want enough of both to coat the chicken.
- Dip chicken in dressing and then coat in breadcrumbs and place in baking dish.
- Repeat with all 4 breasts.
- Cover dish with foil and place in oven, bake for 30 minutes.
- Remove foil cover, bake for another 30 minutes.
- Keep in mind that the thinner your chicken breasts are the faster your chicken will cook, so you may want to check the last 10 minutes of cooking to make sure your"crunchy chicken" hasn't turned into"crispy chicken"!
- Serve with pasta, with or on a green salad or prepare similar to chicken parm, adding a little red sauce and mozzarella the last few minutes of baking.
