BAKED CUSTARD

- Heat oven to 350°F.
- In medium bowl, beat eggs, sugar, vanilla and salt with wire whisk or fork. Gradually stir in milk. Pour into six 6-ounce custard cups. Sprinkle with nutmeg.
- Place cups in 13x9-inch pan on oven rack. Pour very hot water into pan to within 1/2 inch of tops of cups (see box, below).
- Bake about 45 minutes or until knife inserted halfway between center and edge comes out clean. Remove cups from water. Cool about 30 minutes. Unmold and serve warm, or refrigerate and unmold before serving. Store covered in refrigerator.

Corn custard is a wonderful side dish for all kinds of meats. Since it is so soft and light, texturally, it makes a great foil for things like barbecue pork, grilled steaks, and fried fish.

- Preheat oven to 325 degrees F (165 degrees C). Butter six 6-ounce glass or ceramic ramekins. Set ramekins into a 2-inch deep baking dish.
- Place corn into a large saucepan and stir in cream, salt, and cayenne pepper. Bring to a simmer and remove from heat; stir in milk.
- Transfer corn mixture to a blender and pulse several times to get the mixture moving. Blend on high speed until smooth and creamy.
- Whisk egg yolks with eggs until smooth in a mixing bowl. Slowly whisk about 1/4 cup hot corn mixture into eggs until the corn mixture is incorporated. Repeat several times more until all the corn mixture is combined with eggs.
- Divide corn mixture equally into the 6 ramekins. Pour hot tap water into the baking dish to come about halfway up the sides of the ramekins.
- Bake in the preheated oven until custards are just set, 30 to 35 minutes. Let custards cool for about 10 minutes before serving in ramekins or unmolding onto serving plates. To unmold, insert a knife between the custard and the ramekin, go around the edge with knife to loosen, and turn over onto a plate to unmold.

CREAMY BAKED APPLE CUSTARD CAKE
I've not tried this yet, but it sounded so yummy I had to share! From the December issue of Yoga Journal magazine. Preparation and cooking times are estimates. I bet this would be better with pecans instead of the called-for walnuts, but I'm posting it as written. :)

- Preheat oven to 350 degrees Farenheit.
- Butter an eight-inch round cake pan and line with parchment.
- Combine the maple and rice syrup and pour the mixture into the prepared pan.
- Cut about a third of the apples into quarter-inch-thick slices, and arrange in a spiral pattern on top of the syrup mixture so that they cover the bottom of the pan.
- Grate the remaining apples and toss them with the lemon juice and one teaspoon of the cinnamon.
- Combine the remaining cinnamon with the flour, maple sugar, oats, baking powder, salt, and walnuts; set aside.
- In a separate bowl, beat the eggs with the egg whites until light and fluffy.
- Add the melted butter, milk, and vanilla.
- Stir the egg mixture into the dry ingredients and pour into the prepared pan.
- Bake in the center of the oven until a toothpick inserted into the middle of the cake comes out clean, about 50 minutes.
- Cool for 10 minutes on a cake rack, then invert onto a plate.
- Serve warm.

- Heat oven to 350°F.
- Mix dry pudding mix and milk in medium saucepan. Bring to full boil on medium heat, stirring constantly. Remove from heat. Add cream cheese spread; mix until blended. Cool 10 min.
- Meanwhile, spray 13x9-inch baking dish with cooking spray. Cover bottom of prepared baking dish with 5 toast slices, cutting as necessary to fit; brush with half the butter and sprinkle with half the cinnamon sugar.
- Whisk eggs in large bowl. Add pudding mixture; mix well. Pour half the pudding mixture over toast. Top with remaining toast; brush with remaining butter and sprinkle with remaining cinnamon sugar. Top with remaining pudding mixture; let stand 15 min.
- Bake 30 min. or until knife inserted in center comes out clean and edges are lightly browned. Cool 10 min. Sprinkle with powdered sugar.

- In a large saucepan, combine the milk with the lemon zest, cinnamon stick and salt and bring to a simmer. In a large heatproof bowl, using a handheld electric mixer, beat the granulated sugar with the egg yolks at medium speed until they are pale, about 4 minutes. Beat in the cornstarch slurry. At low speed, gradually beat in half of the hot milk.
- Pour the egg-and-milk mixture into the saucepan and cook the custard over moderate heat, whisking constantly for 18 minutes, until very thick. Whisk in the vanilla. Transfer the custard to a large bowl and discard the cinnamon stick and lemon zest. Press a piece of plastic wrap directly onto the surface of the custard and refrigerate until chilled, about 3 hours. Spoon the custard into 6 bowls, sprinkle with ground cinnamon and serve.
