Steps:
- Cook pasta according to package directions.
- In a large skillet, cook sausage in oil and butter over medium heat for 5 minutes.
- Add red pepper and onion; cook and stir until vegetables are tender and sausage is no longer pink.
- Add broth; cook for 2 minutes.
- Add the cream, Parmesan cheese, salt and pepper.
- Bring to a boil. reduce heat; cook over low heat for 8-10 minutes, stirring occasionally.
- Drain pasta.
- In a large bowl, combine sausage mixture and pasta.
- Before serving, sprinkle with parsley.

Steps:
- Take sausage out of casings and crumble.
- Put olive oil and chopped garlic in a skillet and turn the heat to medium.
- When the garlic becomes pale gold, add the sausage.
- Turn from time to time, until nicely browned all over, about 15 minutes.
- Add the tomato and cook, uncovered, stirring occasionally, adjusting the heat if necessary so it will cook at a gentle simmer.
- After about 20 minutes, when the fat separates from the other juices and floats free, add the cream and turn up the heat.
- Cook for 1 to 2 minutes, stirring frequently, until the cream is reduced.
- Add salt and a liberal grinding of pepper.
- Turn off the heat and stir in the chopped parsley.
- Cook pasta in pot of boiling salted water.
- When tender, but firm to the bite, drain; toss immediately with sauce.
- Serve at once with freshly grated parmesan cheese.
- NOTES: The sauce maybe be prepared several hours in advance.
- It should be reheated gently when the pasta is almost cooked.
- I always double the sauce because in my house there never seems to be enough.
- My family loves this sauce.
- Double everything except the sausage, pasta and parmesan cheese to double the sauce.

CREAMY SAUSAGE PASTA
This is quite cheap to make and easy to modify. Sliced sausage links can be used in place of the ground sausage for a different texture.

- Cook the pasta according to package directions, until al dente. When the pasta is finished, drain and toss with a small amount of olive oil to keep from sticking, if desired. Set aside.
- Meanwhile, in a deep skillet or frying pan over medium-high heat, begin browning the sausage, breaking it up into small chunks.
- When the sausage is no longer pink, reduce the heat to medium and add the spaghetti sauce and cream of mushroom soup. Stir to mix well and cook for a few more minutes until the sauce is hot.
- In a large bowl or pot, combine the cooked pasta and sauce. Stir to coat evenly and serve with crushed red pepper and parmesan cheese, if desired.
- Enjoy! Try it with hot sausage, or adding mushrooms, roasted red peppers, or sun-dried tomatoes for variety.

- Heat the olive oil in a large, deep skillet over medium heat. When the oil is hot, add the sausage and cook until it starts to brown, about 5 minutes. Add the onions and cook until softened and translucent and the sausage is well browned, another 5 to 7 minutes. Add the oregano, fennel seeds, red pepper flakes, garlic and some salt and black pepper and stir again.
- Next, add the broth, tomato puree and tomato paste and stir well. Add the uncooked pasta into the sauce, bring to a simmer and cook, stirring occasionally, until the pasta is al dente, 15 to 20 minutes.

CREAMY SAUSAGE AND ESCAROLE BAKED PASTA

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the oregano and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the oregano and stir in the ricotta. Season with salt and pepper.
- Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until browned, about 5 minutes. Transfer the sausage to a large bowl using a slotted spoon. Add the escarole and a pinch of salt to the sausage drippings in the skillet and cook, stirring occasionally and reducing the heat slightly if necessary, until wilted, about 4 minutes. Transfer the escarole to the bowl with the sausage.
- Cook the farfalle in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the mixing bowl.
- Add the tomato sauce, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

- Heat oil in a heavy skillet over medium heat.
- Add sausage and crushed red pepper.
- Cook until sausage is no longer pink, stirring frequently, about 7 minutes.

- Add tomatoes, cream, and salt.

- Put large pot of salted water on high and bring to a boil.
- Meanwhile, squeeze sausage meat out of the casings into a large frying pan, over medium-high heat. Roughly chop meat. When the sausage is no longer pink, add onion and garlic to the pan. Stir and sauté until onion is softened.
- Add pasta to water and cook for 1 minute less than the minimum time recommended on the package. At the same time, add tomatoes, basil and half and half to the sausage mixture. Season with salt and pepper and lightly simmer sauce while pasta is cooking.
- Strain pasta and add to sausage mixture. Turn heat down to medium and let flavors mix together until cavatappi is cooked to your liking.
- Plate the pasta and top with optional cheese and parsley, basil or green onion.
- Note: other shaped pasta work well too if cavatappi not available).
