CREAMY STOVETOP MACARONI & CHEESE KID'S LOVE

I love the traditional baked macaroni & cheese casseroles but when I'm in a pinch for time, I also love this creamy stovetop version. My mom made this quite often when I was a child because she worked full-time and needed quick, kid-friendly dinners on the weeknights. This is so tasty and so easy! Why use a box dinner with powdered cheese product, when you can make this wonderful mac & cheese that kids love? I loved this growing up as did my kids and grandkids. Hope your family enjoys this just as much!

Creamy Stovetop Macaroni & Cheese Kid's Love image

Steps:

  • Cook elbow macaroni according to package directions. When macaroni is tender, remove from heat and drain. Return cooked macaroni to pan.
  • Add milk, butter, salt and cheese to macaroni and return to stove. while stirring constantly, cook over medium heat until cheese melts (this usually only takes a few minutes). Remove from heat and transfer to serving bowl. Serve hot as a side dish or as a main dish with vegetables.

2 cup(s) elbow macaroni, uncooked
1/4 cup(s) milk
1/2 stick(s) butter
6 slice(s) american cheese
1 teaspoon(s) salt

My family's favorite macaroni and cheese - cooked on top of the stove rather than baked! It's flavor is enhanced by the addition of prepared mustard. Little children love it because it's so creamy and cheese-y. For potlucks, make ahead and reheat in microwave, stirring, just before carrying to dinner.

Creamy Stove Top Macaroni and Cheese image

Steps:

  • In skillet on medium heat, melt butter; quickly whisk in flour to form a paste.
  • Immediately add milk, whisking constantly, to form a smooth medium white sauce.
  • Cook until mixture gnently boils and sauce thickens, adding a little more milk to make the sauce the consistency of gravy.
  • Add mustard and cheese, stirring to mix.
  • Cook until cheese melts and sauce is creamy.
  • Reduce heat to low and add macaroni, stirring to mix well and heat macaroni.
  • Serve.

2 cups macaroni, cooked according to package directions
1 1/2 tablespoons butter
2 tablespoons flour
1 1/2-2 cups whole milk or 1 1/2-2 cups skim milk
2 tablespoons prepared mustard
12 -16 ounces shredded cheddar cheese (medium , sharp or extra-sharp, 3-4 cups)
