Try Alton Brown's take on the Southern classic ambrosia, a holiday fruit salad with clementines, pineapples, maraschino cherries and even marshmallows.

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

  • Mix pudding mix, pineapple, marshmallows and coconut in large bowl until blended.
  • Stir in COOL WHIP and cranberries.
  • Refrigerate 1 hour.

1/3 cup dried cranberries

Steps:

  • Drain allof the juice from the cans of fruit and set aside. Mix only 1 1/2 c. of the fruit juice with the 2 packages of white chocolate pudding mix and stir well with a fork till all the lumps are gone. Combine the fruit mixture and sour cream. Stir gently. Fold in Cool Whip. Place in fridge to set until slightly firm.

1 - 16oz can light fruit cocktail
1 - sm. can mandarin oranges
1 - 20oz. can light pineapple tidbits
2 - sm. packages of sugar-free white chocolate pudding mix
1 - cup light sour cream
1 - 12oz. light or fat-free or sugar-free Cool Whip

  • In a large bowl with an electric mixer or in the bowl of of a stand mixer fitted with the paddle attachment, cream the butter; gradually add the sugars, beating well. Add eggs and vanilla, beating well.
  • In a medium bowl, combine flour, baking powder, baking soda, salt, coconut, oats, pecans, raisins or dates, lemon zest and orange zest. Mix well. Stir into the butter mixture.
  • Use a medium cookie scoop to drop the dough onto the prepared baking sheets 2 inches apart. Bake for 10-12 minutes. Remove to wire racks to cool.
