CREOLE CORNISH GAME HENS (CREOLE CHICKEN)
I found this recipe in a church cookbook from Louisianna (the submitter learned to make it in a cooking class called Creole Delicacies). The recipe didn't have any amounts listed for the ingredients so the amounts are what seemed reasonable to me and should be adjusted to taste.

Steps:
- Preheat oven to 325°F.
- Inject the breasts of the hens with the injection sauce (contamination prevention - always pour a portion for the current use into a separate container so that the injector needle never touches marinade that will go back into the refrigerator after it has touched raw poultry).
- Coat the inside of each hen with Bayou Magic sausage mix (this ingredient can be a bit hard to come by outside of South LA, but worth the search for those who like things spicy; great on other wild game as well).
- Sprinkle each hen with poultry magic, then sprinkle with paprika for color.
- Bake until fully cooked: 50-60 minutes (about 20 minutes per pound).

- Preheat oven to 375 degrees F.
- In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.
BAKED CORNISH GAME HENS
Cornish game hens stuffed with a vegetable mixture, then roasted. A Cornish game hen recipe that I found and tweaked a bit for the taste and size of our small family, but it would be very easy to adjust it to fit your needs. It goes well with oven-roasted potatoes.

- Preheat oven to 325 degrees F (165 degrees C).
- In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
- Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
- Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

- Preheat oven to 425°F (220°C).
- Rinse hens under cold water, until the water runs clear; pat dry with paper towels.
- Place in a 9 x 13 inch (3-litre) baking dish or a small roasting pan just large enough to hold them.
- In a small bowl, whisk soy sauce with undiluted orange juice concentrate, sesame oil, honey and curry powder until honey dissolves.
- Gently poke your thumb between skin and breast meat of one hen, lifting skin.
- Tilt bird upward; pour about 2 tbsp (15mL) soy mixture under skin.
- Drizzle about 1/2 tbsp (7 mL) in cavity.
- Repeat with remaining three hens.
- Pour remainder of soy mixture over hens and rub evenly over skins.
- Tightly cover pan with foil.
- Roast in centre of preheated oven for 40 minutes.
- Remove from oven and baste hens with liquid in pan.
- To prevent sauce from burning, stir water into pan juices.
- Reduce oven temperature to 350°F (180°C).
- Return hens to oven and continue to roast, uncovered, about 20 minutes more, basting every 10 minutes with pan-liquid, until a rich glaze forms on top and an instant-read thermometer inserted into thigh reads 170°F (77°C).
- Remove pan from oven and let stand 5 minutes before serving.
- Place hens on individual plates, then spoon pan juices over top.

- Combine Cajun seasoning and pepper; rub over inside and outside of hens. Tie legs together with one end of a 30-inch string.
- Place flour in a large heavy duty, zip top plastic bag; add hens, 1 at a time, and shake to coat thoroughly.
- Pour oil to a depth of 4 inches into a deep pot of a propane cooker; heat to 350°F carefully lower hens into hot oil, using string.

DELIA'S CORNISH GAME HENS (OR CHICKEN AND RICE)
This is my great-aunt Delia's famous New Year's Day main dish, with notes for a cheaper version that my mom made most Sundays. It is so good that my sibs and I would fight (literally) over the last bits of rice clinging to the pan! Don't be tempted to replace the butter with margarine--this is a holiday meal, after all, and you just don't skimp for holidays! Also, don't forget to dry the poultry. If you don't, the butter won't stick to the skin and help crisp and flavor it. Oh, and canned mushrooms work fine instead of fresh.

Steps:
- Chop onion, celery, and green pepper if using, then slice mushrooms.
- Rinse hens or chicken pieces and pat dry.
- In a 13x9 pan, mix rice, broth, and vegetables.
- Arrange birds on top of the rice, settling them in a bit.
- Melt butter, then drizzle over poultry and rice mixture, using all of it.
- Sprinkle with poultry seasoning, salt and pepper, or any herbs of your choice.
- Cover with foil and bake at 350 for about 45 minutes.
- Remove foil and continue baking until poultry and rice tests done and skins are nicely browned.
- Remove from oven and let cool ten to fifteen minutes before serving.
