CAJUN PECANS
Add a bit of sugar to make sweet-and-savory nuts perfect for any party.

Steps:
- Preheat the oven to 250 degrees F. Lightly oil a rimmed baking sheet.
- Whisk the egg white, sugar and Cajun seasoning in a medium bowl until thoroughly blended and slightly foamy. Add the pecans and toss to coat evenly. Spread on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes, until the nuts are fragrant and slightly darker but still a bit moist. They will continue to crisp as they cool.
- Cool completely on the pan. Nuts will keep in an airtight container for up to 5 days.
SEAFOOD CREOLE
This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

Steps:
- Mix together oregano, salt, white pepper, black pepper, cayenne pepper, thyme, and basil in a small bowl; set aside.
- Melt butter in a large Dutch oven over medium heat; stir in tomato, onion, celery, green bell pepper, and garlic. Cook and stir until the onion is translucent, about 5 minutes.
- Stir in chicken stock, tomato sauce, sugar, hot pepper sauce, and bay leaves. Reduce heat to low and bring sauce to a simmer. Stir in seasoning mix and simmer until the flavors have blended, about 20 minutes.
- Gently stir in rock shrimp, bay scallops, and haddock; bring sauce back to a simmer and cook until the shellfish and fish are opaque, about 20 more minutes. Remove bay leaves to serve.

Steps:
- Mix granulated sugar and vinegar in quart jar; add pecans and shake to thoroughly coat nuts.
- Place in shallow baking pan and toast at 250F stirring frequently, until lightly browned.
- Add butter or margarine and seasoned salt to taste, about 1/2 tsp, and toss to coat nuts.
- Continue baking until toasted.
- Cool and store in tight container. Refrigeration keeps them crisp.

- Cream together cheddar cheese and butter with Cajun Seasoning.
- Blend in flour and pecans.
- Roll the dough into logs about 1 1/2 inches in diameter, wrap tightly in plastic wrap and chill.
- Preheat oven to 350.
- Slice dough into 1/4 rounds and bake on cookie sheet for 12-15 minutes.
- Do not brown.
- Enjoy! ;).

From a New Orleans' friend. This pie is very good, and very sweet and very rich. Serve small slices with vanilla ice cream and coffee.

Steps:
- Prebake the chilled pie shell, weighted down, at 350 degrees for 7 minutes.
- Take out the weights and bake another 2.
- Let cool.
- Beat the eggs until frothy.
- Add the remaining ingredients, mix well, pour into the shell, and bake at 350 degrees for about 40-45 minutes, or until set.
- Let cool completely before serving.
- Serve with a scoop of vanilla ice cream.
