ROASTED CAJUN NUTS

Roasted Cajun Nuts image

Steps:

  • Preheat the oven to 200 degrees F. Line a baking pan with parchment.
  • Mix the sugar, Cajun seasoning and cayenne together in a small bowl. If your Cajun seasoning does not contain salt, add 3/4 teaspoon salt.
  • Mix the warm bacon fat or butter with the garlic in a large bowl. Add the almonds, cashews, pecans and peanuts and toss to coat well.
  • In another large bowl, whisk the egg white vigorously until foamy. Add the nuts to the egg white and toss to coat. Add the seasoning mix and toss to coat.
  • Spread the nuts on the prepared baking pan in a single layer. Bake, stirring every 10 to 15 minutes, until glossy and lightly toasted, about 1 hour. Cool completely; the nuts will crisp as they cool.

1 cup raw unsalted almonds

RACHAEL'S SUPERHEATED CAJUN BOILED PEANUTS

This is the real deal that is found in the heart of Florida. I made this recipe to resemble the taste of my favorite boiled peanuts found in the Ocala National Forest. My family agreed this recipe was one of the best!

Steps:

  • Place peanuts, crab boil, jalapenos, garlic powder, salt, Cajun seasoning, and red pepper flakes into a slow cooker. Pour in water to cover the peanuts and stir to combine. Cover and cook on Low until peanuts are soft, at least 24 hours. Stir occasionally, and add water as needed to keep peanuts covered. Drain; serve hot or cold.

Steps:

  • Heat peanut oil in a small baking pan. Place peanuts in a 13 x 9 x 2 baking pan.
  • Pour warm oil over peanuts and stir to coat.
  • Mix remaining ingredients together in a small bowl and mix well. Pour mixture over peanuts and stir well to coat.
  • Bake in a 350 degree oven for 12 minutes. Stir once during baking. Allow peanuts to cool before placing them in a storage container.

  • Traditional Boiled Peanuts: For boiling peanuts on the stovetop, you’ll need a big sturdy pot. I like to use my dutch oven, but any big pot will do. You’ll need 8 cups of water per 2 pounds of peanuts. Add ¼ cup of salt to the water and bring to a boil. Once it’s got a rolling boil, reduce heat to low to simmer, cover, and wait. The peanuts will need to boil for 6 to 8 hours to soften the shell and cook the legume inside. I recommend checking on them every hour or so and giving them a good stir. The peanuts are done when you can easily break open the shell and the peanut inside has a soft bean-like texture.
  • Slow Cooker: Boiling peanuts in a slow cooker is the same exact measurements and recipe as above, only, you’ll use a slow cooker instead of a pot on your stovetop. Once you set it to cover and simmer, check on them and give them a stir every one to two hours.
  • Pressure Cooker: This method is a time saver! For two pounds of peanuts, add ¼ cup of salt and enough water to cover them in your pressure cooking pot. This can be 6-8 cups of water. Add the lid and pressure cook on HI for 45 minutes. Let them naturally steam release, and then remove the lid.

  • Place 2 gallons of water in a 10- to 12-quart stockpot. Add 1/2 cup of the salt to water; stir until salt dissolves. Add raw peanuts. (Skip this step if you are using green peanuts.) Use a large dinner plate to help submerge the floating peanuts. Soak peanuts 8 hours or overnight. (This step saves a little time boiling, but if you don’t have the luxury of soaking time, you can skip it.)
  • Drain soaking water; add 2 gallons water and 1 cup salt to peanuts. (Note level of water on side of pot.) Bring to a boil over high. Reduce heat to low. Simmer, covered, until peanuts are as soft as roasted chestnuts or softer, 5 to 8 hours (2 to 3 hours for green peanuts), keeping water in pot within an inch or so of its original level with regular additions of water. After peanuts have boiled 3 hours (1 hour for green peanuts), sample them to check their texture and salinity. Remove a peanut, and wait until it is cool enough to handle. Open the shell, and give the peanut a chew, slurping some brine with it. If it crunches, cook it more. If the brine lacks salt, add more by 1/4-cup amounts. If it is too salty, remove some of the water, and replace with the same volume of fresh water. Allow an hour for the salinity to equalize before testing again. Sample peanuts every hour until they are pleasantly yielding and as salty and appetizing as a good pickle.
  • When peanuts are cooked, remove from heat, and let them cool in the pot 1 hour (20 minutes for green peanuts). When cool enough to handle, drain and eat. Or store in the shell, in a sealed container, in the refrigerator 7 to 10 days or in the freezer several months.
