TURKEY MEATLOAF

- Preheat oven to 325 degrees F.
- In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
- Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
- Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
- Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
- Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

CREOLE TURKEY MEATLOAF
OK, I had to get creative with meatloaf because my hubby hates it with a capital H! This is the only way he will eat it and I have to admit... It's very tasty, if I do say so myself. Instead of the typical ketchup topping I make a cheese sauce to top it when served.

- 1. Mix all ingredients and pour into a loaf pan. Bake @ 350 for 40-50 minutes or until cooked through. Since it's turkey you don't have to worry about it getting too greasy and running over in the oven
- 2. For cheese sauce: In a medium pot mix soup and cream. Over medium heat stir constantly to assure it doesn't scorch. Once it's heated through add cheese, again stirring constantly until completely melted. Add pepper to taste and serve over sliced meatloaf.

- Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
- Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
- Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
- When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

SIMPLE TURKEY MEATLOAF

- Preheat oven to 375 degrees with rack positioned in center of oven.
- Place turkey in a large bowl. Add onion, bell pepper, breadcrumbs, celery, egg, 1 tablespoon ketchup, garlic, Essence, salt, and pepper. Gently mix until ingredients are well combined. Transfer turkey mixture to a 1-pound loaf pan; form into a domed loaf shape.
- Place remaining ketchup in a small bowl; stir in hot sauce. Spoon ketchup mixture evenly over meatloaf, spreading with the back of a spoon.
- Bake until meatloaf is browned on top, cooked through, and an instant-read thermometer inserted in the center registers 165 degrees, 45 to 50 minutes.
- Remove pan from oven and let meatloaf stand 5 minutes before serving.
CREOLE MEATLOAF
I don't care for Weetabix cereal as a cereal itself, but the recipe on the box I saw years ago for using the cereal in meat loaf is insanely yummy! I figured, people put corn flakes in meat loaf, so why not try this. I add green bell peppers as well as the red called for.

- Combine the ground beef, egg, crushed Weetabix, 1/2 cup of the chili sauce, 1/4 cup each of the peppers, and 1/2 of the chopped onion in a bowl. Mix well but don't over handle.
- Place in a large loaf pan, pat firmly.
- Bake at 375°F, for 35 minutes.
- Meanwhile, fry the remaining peppers, onion, and the garlic in the oil until tender. Stir in the remaining 1/2 cup chili sauce, and simmer about 5 minutes.
- Drain excess fat from the meat loaf. Top with the sauce and bake a further 10 minutes.

- Preheat oven to 400°. Place onion, pepper, celery, pepperoncini and garlic in turkey cavity. Tuck wings under turkey; tie drumsticks together. Place on a rack in a shallow roasting pan, breast side up. In a small bowl, beat butter and Creole seasoning; rub over turkey. Roast, uncovered, 20 minutes., Reduce oven setting to 325°. CREOLE MEAT LOAF
This meat loaf is not spicy, despite the name. It is a mix of ground beef and pork, with a nice creole sauce on top. It originally came from an old Southern Living cookbook, but the recipe has been changed significantly since its publication. If you would like, put the cheese of your choice on the meatloaf before adding the creole sauce. Also, feel free to substitute creole seasoning for the salt and pepper!

- For the meat loaf, mix the first 10 ingredients thoroughly in the order given and shape into a loaf. Pack into a greased 9 x 5 x 4 inch loafpan. Cover with creole sauce and bake at 350 degrees for 1 hour.
- For the creole sauce, melt the shortening; add flour, and cook over medium heat until a rich brown, stirring constantly.
- Add chopped pepper, onion, and garlic. Let simmer until wilted. Add milk.
- Add tomotoes, salt and pepper (or creole seasoning), and worcestershire sauce. Let come to a boil and cook for 4 to 5 minutes.

- Turkey.
- Position rack in lower third of oven and preheat to 325 degrees.
- Pat turkey dry.
- Gently slide fingers between turkey breast skin and meat to loosen skin.
- Rub Creole Butter under skin over breast meat.
- Spoon stuffing into cavity, packing firmly. (You may prefer to cook the stuffing separately, if desired, in a large casserole dish.).
- Truss turkey and arrange breast side up on a rack in shallow roasting pan.
- Roast turkey until juices run clear when thigh is pierced or meat thermometer registers 170 degrees, basting every 20 minutes with pan juices, 3 1/4 to 3 1/2 hours.

- Degrease pan juices.
- Set roasting pan with pan juices over medium-high heat; add stock and bring to a boil, scraping up any browned bits.
- Boil 5 minutes, thicken with cornstarch or flour slurry if desired and strain into a sauceboat.
- Serve turkey, passing pan juices separately.
