CRISPY BREADED SWEET POTATO FRIES
The sweet potato adds a hint of flavor to these fries. I haven't tried them with regular white potatos.

Steps:
- In a shallow bowl, whisk egg and water.
- In a resealable plastic bag, combine the bread crumbs, Parmesan cheese, cayenne and pepper.
- Cut sweet potato into 1/4-in. strips. Add to egg mixture, a few at a time, and toss to coat. Add to the crumb mixture, a few at a time; seal bag and shake to coat.
- Arrange potato strips in a single layer on a baking sheet coated with nonstick cooking spray; drizzle with oil. Bake at 450° for 25-30 minutes or until golden brown and crisp, turning occasionally.

- Position rack in upper third of oven and preheat oven to 425 degrees F. Spray baking sheet with non-stick spray.
- Place sweet potatoes and soybean oil in large bowl, toss lightly. Sprinkle with salt, pepper and paprika.
- Arrange potatoes in a single layer on prepared baking sheet, being sure not to overcrowd.
- Bake until tender and golden brown, turning occasionally. Cooking time is 18 to 24 minutes. Cool 5 minutes before serving.

- Wash and peel your sweet potatoes. Cut into 1/4 inch thick fries and rinse the potatoes for about 10-15 seconds under cold water then dry with paper towels or a clean dish cloth you don't mind turning slightly orange.
- Mix the cornstarch with the water to make a slurry in a large bowl or large ziploc bag, add sweet potatoes and toss to coat.
- Heat your oil in your pot to 350 degrees and add the fries 1 at a time so they don't stick together, but make sure you don't overcrowd your pan.
- Each time you do another round of potatoes toss the potatoes in the slurry again to prevent the cornstarch from settling. This should only take a few seconds and is even easier if you have a ziploc bag you can just flip upside down a few times and shake.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible**. See the video for full instructions!
- Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
- Place the fries in a large bowl; drizzle with the olive oil, then add the garlic powder, onion powder, kosher salt, and cornstarch. Mix thoroughly to combine. Line two baking sheets with parchment paper. Spread the fries on the paper, placing them as far apart as possible.
