EASY PAN FRIED SOLE FISH WITH LEMON-BUTTER SAUCE

This is a pretty basic recipe but it is just delicious! You can use lemon pepper in place of black pepper.

Easy Pan Fried Sole Fish With Lemon-Butter Sauce image

Steps:

  • Mix the flour with seasoned salt and pepper in a shallow dish.
  • Dredge the fish fillets in the flour mixture.
  • Heat a large skillet over high heat.
  • Add in about 3 tablespoons butter to the hot skillet.
  • Saute the fillets in 2 batches, cooking on each side (on high heat about 2 minutes per side) or until just cooked through; transfer the fish to a plate to keep warm.
  • Add in the remaining 4 tablespoons butter and cook until golden in colour; add in lemon juice, bring to a boil and add in the parsley.
  • Season the sauce with salt and pepper.
  • Pour the warm sauce over the fish.
  • Serve immediately.

8 sole fillets

Steps:

  • In a shallow bowl, beat eggs. In another shallow bowl, combine the following four ingredients.
  • Dip the fish pieces into the crumbs, into the egg, and than into the crumbs again. Pat crumbs into fish fillets.
  • In 12-inch non-stick skillet, heat 1 tablespoon butter and 1 tablespoon oil until butter melts. Add 2 pieces of fish and cook. Only turn fish once while browning both sides, approximately 6 minutes.
  • When fillets are golden brown add remaining butter, oil, and fish. Repeat the steps above to cook fillets.

2 large eggs
3/4 cup breadcrumbs, plain
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon salt

  • Place fish in a 1-gallon plastic bag and add flour; gently shake until completely coated.

  • For the mayo:.
  • Separate the egg(s), reserving the white. Place the yolk, mustard and lemon juice into a small bowl and whisk together until well blended. Add oil a couple drops at a time and whisk until blended. Continue adding slowly until about a tablespoon has been added.
  • At this time the emulsion is established, and the oil can be added in a thin
  • stream with constant whisking. If you see oil that is not incorporated, mix it in before adding more oil. When all the oil is added, continue mixing for a
  • minute or so, add salt and pepper to taste and mix in herbs.
  • Cover tightly and refrigerate until serving. A food processor or blender can be used, following the same procedure.

  • Mix the cornstarch and egg white, thinning if necessary with water to the consistency of heavy cream.
  • On a plate, combine flour, cornmeal, cayenn and salt and pepper.

  • The sole is the fastest to cook, and the part you want to make certain is hot, so prepare them last. While the rice is sitting after cooking is what I've done.
  • Sauce:.
  • Puree the parsley, garlic, capers, vinegar, mustard and onion in a blender or food processor.
  • Once this reaches a smooth consistency, slowly pour in the oil while continuing to blend.
  • This can be stored tightly covered in the refrigerator for several days. Let it come back to room temperature before serving.
  • Cook the wild rice according to the directions to make about 1 & 1/2 cooked cups.
  • Fish.
  • Heat the olive oil in a frying pan large enough to hold the fillets side-by-side on high heat.
  • Rinse the sole in water, pat mostly dry.
  • Lightly flour each side.
  • Quickly fry the sole, 1-2 minutes per side.
  • Put half the rice on each plate, along with a sole fillet and drizzle with sauce.

Steps:

  • Make the Sauce:.
  • Set a small saucepan over medium heat and stir together 1/4 cup water and the vinegar, soy sauce, ketchup, sesame oil, sugar and cornstarch. Bring this to a simmer and cook, stirring, until the sauce thickens - about 1 minute. Keep warm.
  • Prep the Fish:.
  • Lightly beat the eggs in a shallow pie dish. Spread the flour on one plate and the panko on another plate. Season the flour with a pinch each of the salt and pepper. Season the sole with a bit of salt on each side and then dip them first into the flour, then into the egg and finally the panko, coating each side evenly. You may want to press the panko into the fish with your fingertips to make sure it adheres well.
  • Panfry:.
  • Heat a large nonstick skillet over med.-high to high heat until just hot and then add the oil. Add the fish and fry, turning once, until golden brown on both sides (about 3-4 minutes on each side). Depending on how big your pan is/ how many filets you have, you may need to fry the fish in batches. Have the extra oil handy in case the pan gets too dry while cooking.
  • Drain the fish on paper towels briefly. Then serve the fish fillets with the sauce.
