I love this cake. Makes your whole house smell wonderful. If you can't find butternut flavoring, you can also use vanilla-butternut or a combination of vanilla, butter and any nut flavoring of your choice. It is important that you bake this cake in a cold oven - do not preheat!

- Grease and flour a 10 inch tube pan. Mix together the flour and salt. Set aside.
- Combine the evaporated milk and whole milk; Set aside. In a large bowl, cream together the butter, shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the butternut flavoring. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
- Pour batter into prepared pan. Bake at 325 degrees F (165 degrees C) for 1 hour and 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

- Cream shortening, butter, sugar and salt.
- Add eggs, one at a time.
- Add flour and milk alternating small amounts of each.
- Fold in flavoring by hand.
- Bake in greased tube pan for 1 hour and 45 minutes at 325*.
- DO NOT open oven door while baking.
- Remove from pan immediately.

My mom made this cake for my brother every year for his birthday when we were growing up. It is a very comforting, old-fashioned and delicious cake.

- For the cake:.
- Mix all the ingredients together and pour into a greased, floured angel food cake pan or a greased bundt pan.
- Place in COLD oven and turn heat to 325 degrees.
- Bake for 1 hour and 40 minutes, or until toothpick comes out clean.
- For the frosting: ****.
- Beat cream cheese and butter until smooth.
- Add box of powdered sugar and beat well.
- Add butter & nut flavoring and blend.
- Stir in chopped pecans.
- Spread on top of cake and let come down the sides.

- My mother always put the full batch of frosting on the cake. My aunt's recipe says to make 1/2 the frosting recipe for the cake. It is a personal preference. If you like alot of frosting; make the entire batch. If you don't like too much frosting cut the frosting recipe in half.

GRANDMA'S BUTTERNUT POUND CAKE
My grandmother is the most amazing cook I know and this is one of my favorite cakes that she makes. It simply melts in your mouth. She usually cuts up some fresh berries to put on top of the cake which makes it the perfect southern dessert!

- Beat on high speed for 5 minutes.
- Then add milk and flour on low speed until mixed well.

PURELY POUND CAKE
Steps:
- Preheat the oven to 325 degrees. Butter 2 (6-cup) loaf pans and line them with parchment or waxed paper.
- In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter until very light and fluffy, about 10 minutes. Add the sugar and mix. Working 2 at a time, add the egg yolks, mixing well between each addition. The mixture should be very fluffy. Add the brandy, rose water, nutmeg and salt and mix to incorporate. Working in 3 batches, add the flour, mixing just until combined and scraping down the bowl between additions. In a clean dry bowl, whip the egg whites until stiff but not dry. Add to the batter and mix well, until no streaks of egg white remain. If necessary, fold in the last few streaks by hand. Pour the batter into the prepared pans and smooth the tops. Bake until golden brown and split on the top and a tester inserted in the center of the cake comes out clean (a few crumbs are okay), 70 to 80 minutes. Let cool in the pan for 30 minutes. Knock the cake out of the pan and let cool (do not remove the parchment paper; it helps the cake stay moist).
