SLAB-BACON TACOS WITH BURNED-SCALLION CREMA
This is candied bacon, essentially, on corn tortillas with a creamy, smoke-flecked sauce that tastes of scallion and lime. I like it with pineapple salsa as well, and a salad of cilantro, mint and soft lettuce. You could make it with your standard sliced bacon from the market, but it's far superior with the thick-cut variety or, best of all, with a chunk of uncut bacon that you can slice as thick as you like.

Steps:
- Heat oven to 450 degrees. Mix the chile powder, ground cumin, brown sugar and black pepper together in a large bowl, and then add the bacon slices, tossing to coat them with the spice mixture.
- Arrange the coated bacon slices on a sheet pan, ideally one fitted with a wire rack. Roast in the oven until they are caramelized and starting to crisp at the edges, approximately 10 to 15 minutes. Remove pan from oven, chop the bacon into large dice and keep warm. Reserve the bacon fat for another use.
- While the bacon cooks, make the crema. Put the scallions and jalapeño in a large dry sauté pan and cook over high heat, tossing occasionally, until the scallions and jalapeño have blackened at the edges, approximately 10 to 12 minutes.
- Put the scallions and jalapeño in the bowl of a food processor, and blitz them with the juice of 1 lime, then add the sour cream and mayonnaise, and blitz the mixture until it is smooth and flecked with blackened bits. Season to taste with the salt and, if you'd like the mixture thinner, the juice of the second lime. Scrape into a bowl, and reserve.
- To serve, warm the tortillas in the dry pan, one or two at a time, and reserve them in a tortilla warmer or clean dish towel. Fill them with the diced bacon and a slash of the crema, along with quartered limes and, if you like, salsa, cilantro, mint and hot sauce.

Steps:
- Put the bacon in a non-stick frying pan in a single layer. Top with another heavy pan or frying pan that fits snugly into the pan on top of the bacon. If it's not very heavy, top with another pan, or anything heatproof and weighty.
- Fry on a medium-low heat for 10-15 mins until golden and super-crispy. Check the bacon halfway through cooking - increase the heat slightly if there's lots of liquid in the pan, and flip the bacon over. Keep cooking until the bacon is uniformly golden and crisp.
- Drain on kitchen paper before adding to sandwiches or crumbling over salads or soups.

OVEN-BAKED BACON
I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

Steps:
- 1. Preheat oven to 350. Line a Jelly Roll pan with foil for easy clean up. Place slab of bacon in center of pan, fatty side up. With a sharp knife cut cross every 1", about 1/2" deep..Then turn and cut across again, so it looks like tic tac toe, only with a lot of lines...
- 2. Drizzle maple syrup over top and rub in, you want it to get in those cuts. Then repeat with 1/2 cup whiskey glaze. Cover tightly with foil and bake for one hour. Remove from oven, reduce heat to 325. Turn slab over...brush or drizzle 1/2 cup or so of whiskey glaze over top, cover again with foil and bake another hour.
- 3. Remove from oven, allow to rest 10 minutes, remove foil, slice as desired (I did approx 3"x1" pieces), place in skillet over medium heat, drizzle with more glaze to coat all sides and warm through, sauce will thicken and caramelize as it heats. Be careful not to burn. Serve as desired. I served over polenta with a little dish of more whiskey sauce for dipping. ENJOY!!!
- 4. POLENTA: 3 c milk, 1 1/4 c cream, 1/2 c butter, 1 1/2 tsp sea salt, 1 Tbsp sugar, 1 1/2 c corn meal... Butter or spray a 9x13 pan, set aside. In a large saucepan over medium heat, bring milk, cream, salt and sugar to a boil, stirring occasionally. When it starts to boil, slowly sprinkle in corn meal while briskly whisking the whole time, until all corn meal has been incorporated. Continue to whisk until thickened. Then pour into prepared pan. Set aside to cool. When cool cut into servings. Warm slightly before serving. May be stored in refrigerator for up to a week.

3 WAYS TO MAKE PERFECT CRISPY BACON EVERY TIME
From myrecipes.com
Estimated Reading Time 4 mins
- Rinse well. Fat is good, but too much fat is not. Right off the bat, rinse your bacon well with hot water to remove all the congealed excess. Give it a little shake in the sink to remove excess water, then pat dry.
- Select your cooking method. Oven: This is quite simply the best way to cook bacon: no spattering, no burning, minimal shrinkage and best of all, lots of clean rendered fat that you can store in the fridge for a rainy day.
- Drain properly. If you’ve roasted your bacon there’s no need to worry about this, as all the fat dripped off in the oven. If you’ve cooked it in a pan, you’ll need to wipe off the extra grease.
