CROATIAN BBQ SAUCE
This is very simple and hot sauce. You can put some rice in it and you get something like "djuvech", but not so rich with various vegetables.

Steps:
- Cut onion into thin rounds. Cut peppers into thin rounds. Finely mince garlic. Put olive oil into frying pan; add onion and pepper rounds, garlic and tomato. Season it with chili salt and pepper. Sauté it for about 40 minutes. During the process add some water to prevent premature burning. The sauce is ready to serve when all liquid evaporates; vegetables are soft and reduced in size. Serve hot.

CROATIAN BBQ BURGER (PLJESKAVICA)
This is similar meal like chevapchici but instead of sticks you have a whole burger. There is also little difference in ingredients.

Steps:
- Take twice grounded beef. Very finely mince garlic and onion and put them into meat. Season it with salt, pepper and paprika. Add water. Mix well with hand and let it stay in refrigerator for 2-3 hours.
- Make burgers and put them on fire. They must be rose inside, do not overdo it.
- Serve with fresh salted onion and bread.
- Grate goat cheese and sprinkle over warm pljeskavica and serve.
CROATIAN DALMATIAN BBQ CHICKEN
This is refreshing and light meal with taste of Dalmatia. It is important to use fresh spices, preferably wild grown, but dry would do. Also pick small and young chickens; they are soft and easier to BBQ.

Steps:
- Cut chickens into pieces, not too big.
- Mix wine, sage, rosemary, thyme, nutmeg, oil, lemon juice, salt and pepper into a glass bowl. Add chicken pieces and marinate for 2 hours.
- During BBQ-ing chicken, periodically spread olive oil with rosemary branch. Serve hot when ready.

BEST CAROLINA BBQ MEAT SAUCE
I can't take all the credit for this stuff. I have had to search, and snoop and experiment to get it right. (Thanks Big Daddy's!) But I've had barbeque in some of the best little places in the Carolina's, and this stuff rules there! Fantastic on pork! Or try brushing some on chicken as it finishes off the grill! Use fresh ground peppers for the best flavor. This will keep in fridge for a couple of weeks.

- In a heavy non-reactive saucepan, stir together the mustard, brown sugar, vinegar, and beer. Season with chili powder and black, white, and cayenne peppers. Bring to a simmer over medium-low heat, and cook for about 20 minutes. DO NOT BOIL, or you will scorch the sugar and peppers.
- Mix in the Worcestershire sauce, butter, and liquid smoke. Simmer for another 15 to 20 minutes. Taste, and season with hot sauce to your liking. Pour into an airtight jar, and refrigerate for overnight to allow flavors to blend. The vinegar taste may be a little strong until the sauce completely cools.
