GNOCCHI MAC AND CHEESE RECIPE BY TASTY

Two comfort-food classics, one magical mashup! Pillowy gnocchi covered in a creamy cheese sauce is truly a Tasty dream come true. Trust us, you've never had mac and cheese like this before.

Steps:

  • Preheat the oven to 350°F (180°C).
  • Melt 6 tablespoons of butter in a large cast iron skillet over medium heat. Add the flour and garlic powder and cook, whisking constantly, until light golden brown, about 3 minutes.
  • Add the mustard, heavy cream, milk, thyme, salt, and pepper and whisk to incorporate. Bring to a simmer, then stir in the mozzarella, white cheddar, and 1 cup (110 g) of the Parmesan cheese until fully melted, about 3 minutes.
  • Stir in the gnocchi until fully covered in the cheese sauce, then remove the pan from the heat.
  • In a medium bowl, microwave the remaining 4 tablespoons of butter on low power until melted.
  • Add the bread crumbs and remaining Parmesan to the melted butter and stir to combine.
  • Sprinkle the bread crumb mixture evenly over the gnocchi.
  • Bake the gnocchi for 25-30 minutes, until the sauce is bubbling and the top is golden brown.
  • Enjoy!

I never thought I would like gnochhi, but this really opened my eyes. To me gnocchi was a no-flavor mound of dough. In this recipe, not only do you learn how to really make it, but with a sauce that is so rich you want to drink it like soup!

Gnochhi in 3 Cheese Sauce (From Chef Fabio on Chow Ciao) image

Steps:

  • Cold potatoes are critical to making good gnocchi! Bake them the night before. 375 for a minimum of 60 minutes, make sure they are done- poke with a fork, before and after!
  • Scoop out the flesh of the potatoes once they are cool. [not necessary to the recipe, but save potato skins to fill with cheee and chili to bake and serve with sour cream, onions and hot sauce- awesome!].
  • Refrigerate the baked potato flesh overnight.
  • Next is to mix the dry ingredients in a stand mixer (flour, parm and nutmeg) (or do it with a hand mixer and a boatload of patience).
  • This is the dating stage, let those dry ingredients blend together --
  • Stop the mixer and add all of the COLD potato at once.
  • Mix on low for 5 minutes. At first this will look very dry and you will be tempted to add liquid. DO NOT DO IT!
  • After 5 minutes, you have a dough. They are married now and we all honor the bond :).
  • While doing this, brown the italian sausage in a pan. Make sure it is done because it will only be warmed through after this stage.
  • As you are making the dough, prepare the cheese sauce:.
  • Start a small pot of water to a boil and place a glass bowl over it.
  • Keep the water boiling at a low temp, barely boiling- small bubbles.
  • This is a double boiler, most people know what it is, but if you did not, just cook in the clean bowl and let the boiling water do the heating!
  • To the bowl on top, add the three cheeses (this keeps the cheese sauce from sticking to the bottom of a pan- a bowl in this case).
  • Add the cream. The cream will absorb the heat and allow the cheeses to melt together.
  • The dough is now looking like dough, bring it out and punch it down and knead it a few times- you don't want air bubbles in the dough or they will absorb water.
  • Cut the dough into fist sized balls.
  • Roll them out with your palms to make long, cigar-shaped cylinders.
  • Line them all up and chop at 1/2-3/4" intervals. This makes the pillow shpaed gnocchi.
  • The cheese sauce should be melted so mix it up with the sausage in a serving bowl.
  • Turn the water up to a boil to cook the gnocchi in the boiling water.
  • Once a few of them float to the top, ALL of them are done. Don't pick the floaters only, when a few float, get them all (assuming you added them all at the same time).
  • Put the gnocchi into the sauce/sausage mix and let stand for a minute or two so the gnocchi can absorb the awesomesauce.
  • Serve with shaved parm.

  • Cut up the heirloom tomatoes into cubes. The juice of the tomato is very important to this recipe so make sure to use a ripe tomato. Add the minced garlic. Rough chop the basil leaves and add them to the rest of the ingredients. Add the evoo and mix everything together. Don't add the salt yet. You'll add a dash right before you combine the sauce with the cooked pasta. Now, let the sauce sit and move on to the pasta.
  • First, boil the potatoes and then bring them to room temp. Add all ingredients together and knead the dough by hand. One your dough ball is formed you can break off and shape into smaller balls. Take each ball and roll it out making a long rope. Then using a butter knife cut pieces of the rope into 1/2 inch sections. Grab a fork and roll the little sections over the fork tongs to create the ridges.
  • Time to get the water boiling so we can cook the pasta. It's an absolute must when cooking Italian to season the water with salt. The salt flavors the pasta. Without salt the pasta has no flavor. When the water has come to a boil add the pasta. Make sure to stir so the pasta doesn't stick to the bottom of the pan and when the pasta floats to the top give it a few more minutes and then remove from the water. Add the dash of salt now to your sauce and then add the cooked pasta to the sauce and combine. That's it. Fresh pasta in less than 30 minutes. Enjoy!
