CROATIAN CHICKEN SOUP

This is very simple soup, traditional Sunday lunch starter in Croatian families. It must be cooked on very low fire for 3 to 4 hours. My recommendation is to use old chicken - the one which is too hard to grill or fry. You can also do it with turkey.

Croatian Chicken Soup image

Steps:

  • Put cold water in a pot (appropriate large pot). If you want better soup put chicken in cold water, if you want better chicken meat put it in hot water.
  • Rind carrots, onion, parsley, celery and put all other ingredients into water. Boil and after it boils reduce heat and cook for 3 to 4 hours.
  • Filter the soup into separate pot.
  • If you want, put into strained soup carrots, chicken meat (or liver, stomach, or hearts) and add noodles or whatever you like in soup and serve.

600 g chicken
60 g chicken livers
20 g chicken (hearts)
20 g chicken (stomach)
200 g carrots
100 g tomatoes (or one whole tomato)
150 g onions
100 g parsley roots
50 g celery root
10 g kale (leaf)
10 g salt
10 g black pepper (whole berries)
3 liters water (cold)

Croatian Sour Soup image

Steps:

  • Simmer potato in salted water until tender but firm.
  • Drain and set aside, covered.
  • Saute the onions and paprika in the oil, add the garlic and saute for a few minues more.
  • Mix in the fennel, bay leaf, carrots, parsnips and celery, saute for 5 minutes, stirring.
  • Sift the flour ino the vegetables and simmer on low heat for a few minutes, stirring.
  • Add the salt, black pepper, vinegar and vegetable stock.
  • Simmer for 10 minutes then stir in the potatoes and sauerkraut.
  • Garnish each bowl with sour cream or chives, serve with black bread or marbled rye.

This is also traditional, but Saturday family lunch starter. We usually eat the meat we are cooking in this soup. The best parts of the meat for this soup are ribs or belies.

Steps:

  • Put cold water in a pot (appropriate large pot). If you want better soup put beef in cold water, if you want better beef meat put it in hot water.
  • Rind carrots, onion, parsley, celery and put all other ingredients into water. Boil and after it boils reduce heat and cook for 3 to 4 hours.
  • Filter the soup.
  • If you want, put into strained soup carrots, and add noodles or whatever you like in soup, sprinkle with freshly minced parsley leafs and serve.

Croatian Chicken

Steps:

  • Melt the lard in a pot.
  • Add 2 large onions finely minced and sauté it until the onion is soft and transparent.
  • Chop the chicken into small pieces (mouthfull). Than, add chicken pieces and sauté it until the meat is white.
  • Add wine and sauté it for 5 more minutes.
  • Than add 3 teaspoons of paprika (chili to taste), salt pepper and caraway seeds.
  • Add water to cover the chicken.
  • Sauté for 50 minutes or until chicken is soft.
  • At the end add 2-3 teaspoons of sour cream and cook for 2-5 more minutes.
  • Serve with noodles or mashed potatoes, and inevitably white wine (you've used in the paprikas).
  • As a salad with it I would recommend red beet.

Steps:

  • First slice the meat in peaces 2-3 cm large.
  • Put the olive oil in a pot and sauté the onion until it is soft. Add the meat, salt pepper and bay leaf. Sauté it for 15 minute When the meat relief the water, add bacon, garlic, majoran and basil and sauté for 5 more minutes; than add the wine and sauté until wine partly evaporates.
  • Add tomato and cook 30 min on easy fire. If there's not enough liquid add some water.
  • Cook it for about 60 min; or until the meat is soft. Before eating leave it still for 10 min., and add some more olive oil (to taste). If you taste it is too sour, you may add some sugar (sometimes tomatoes are sour, plus wine, it can be too sour).
  • Serve with potato gnocchi, noodles or mashed potato.
