CROATIAN FISH "BRODET"

Recipe from Croatian island Hvar. There are many ways of making "brodet", this comes from village Vrboska on Hvar. It is better if you use several kinds of fish.

Croatian Fish

Steps:

  • For this meal you have to have large round pot with low rim.
  • Put olive oil in a pot and sauté the onion until it is soft.
  • Put fish in (if it is too big cut it in portions), fry very shortly. Add vinegar and cook gently for 2 more minutes.
  • Add garlic and bay leaf. DO NOT STIR with any kind of ladle, just shake the whole pot (if you have wooden flat ladle, you may move fish a bit).
  • Add tomato, salt, pepper, raisins and water to cover fish.
  • Cook open for 50-60 minute on not too strong fire.
  • Add water if evaporates too quickly.
  • Try it: if it's too sour, add sugar.
  • At the end add parsley leaves and some more olive oil.
  • Serve with hard corn mush (polenta, as we say).

500 g tomatoes (strained or 3-4 whole fresh tomatoes, very finely minced)
1 teaspoon salt (to taste)
1 teaspoon black peppercorns (or just to taste)
1 tablespoon fresh parsley leaves (minced)
1 tablespoon sugar (to taste)

CROATIAN "ZGVACET"

This meal is from NW part of Croatia, from peninsula Istria. It is important to use two kinds of meat, so you can vary: veal-turkey; pork-beef; pork-turkey, beef-horse etc.

Steps:

  • First slice the meat in peaces 2-3 cm large.
  • Put the olive oil in a pot and sauté the onion until it is soft. Add the meat, salt pepper and bay leaf. Sauté it for 15 minute When the meat relief the water, add bacon, garlic, majoran and basil and sauté for 5 more minutes; than add the wine and sauté until wine partly evaporates.
  • Add tomato and cook 30 min on easy fire. If there's not enough liquid add some water.
  • Cook it for about 60 min; or until the meat is soft. Before eating leave it still for 10 min., and add some more olive oil (to taste). If you taste it is too sour, you may add some sugar (sometimes tomatoes are sour, plus wine, it can be too sour).
  • Serve with potato gnocchi, noodles or mashed potato.

Steps:

  • For this meal you have to have large round pot with low rim.
  • Prepare the potato: slice it in round thin pieces. Put it in a separate pot, cook until water starts to boil, cut the heat and leave it there.
  • Put olive oil and garlic on heat and when starts to fry add fish sliced in pieces 3-6 cm large. DO NOT STIRR with any kind of ladle, just shake the whole pot.
  • When fish starts to stick to pot add wine, salt, pepper, bay leaf and potato. Shake it well and add water to cover. Cook until potato is soft (15-20 min). At the end add parsley. Eat it with spoon.

CROATIAN BOILED FISH (AND SOUP)

This is very old recipe from Dalmatia. The difference between regions in Dalmatia is that some put vegetables in a soup same not. I'm going to give you the simplest recipe, ingredients "sine qua non" as old Romans would have said. Using water you've cooked fish you can make nice soup. Just add cooked rice, olive oil and fresh parsley, filter the soup and you have it - nice and tasty.

Croatian Boiled Fish (And Soup) image

Steps:

  • Use large pot with low rim and add water. Put onion, garlic, bay leaves, pepper (use whole black pepper berries) and cook 20 minutes until onion is soft (you can crush garlic).
  • In the meantime clean the fish (do not chop the fish; it must stay in one piece). Add salt, vinegar, olive oil and fish in boiling water and cook for about 5 to 20 minutes (it depends how large fish is).
  • To serve, take out the fish and put it on a plate with cooked potato. Cover with additional olive oil and eat it.
  • For the soup: cook rice, filter the water, and add parsley and olive oil and you have a soup.
