CROCK POT ITALIAN BEEF WITH PEPPERONCINI
Wonderful roast for Italian Beef sandwiches. Not for salt restricted diets, but exceptional flavor. The original recipe calls for beef roast and pepperocini only, but I have tweaked it to suit my taste. Try it, you'll love it! (Preparation time does not include cook time.) Also, adjust seasoning to your taste, add onion, mushrooms or whatever you like.

Steps:
- Place roast, pepperocini and half the pepperocini juice in crockpot.
- Mix water, au jus, oregano, basil and garlic in measuring cup and pour over roast.
- Cook on low heat for 7 to 8 hours.
- When roast is tender, pull apart with forks and let simmer in juice another 1/2 hour or so.
- Serve on toasted Hoagie rolls with cheese, pepperocini and juice from pan for dipping.

SLOW COOKER ITALIAN BEEF FOR SANDWICHES
This makes a sandwich similar to one I used to get at a local restaurant when I lived in a suburb of Chicago. My all time favorite! Serve on crusty rolls with roasted sweet or hot peppers, if desired.

Steps:
- Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.
- Place roast in slow cooker, and pour salad dressing mixture over the meat.
- Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

- Drain the pepperoncini, reserving liquid. Remove and discard stems of peppers; set peppers aside. Cut roast into large chunks; place a third of the meat in a 5-qt. slow cooker. Add water., In a small bowl, combine the seasonings; sprinkle half over beef. Layer with half the remaining meat, then the onion and pepperoncini. Pour pepperoncini liquid over the top. Add remaining meat to slow cooker; sprinkle with remaining seasonings., Cover and cook on low until meat is tender, 8-9 hours. Shred beef with 2 forks. Using a slotted spoon, serve beef and peppers on rolls.,

PEPPERONCINI BEEF
Roast beef cooked in a slow cooker with garlic and pepperoncini makes a delicious and simple filling for gyro sandwiches. Serve on hoagie rolls with provolone or mozzarella cheese, and your choice of condiments.

Steps:
- Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.
- Cover, and cook on Low for 6 to 8 hours.
- When making the sandwiches, place meat in rolls, top with cheese, and zap in a microwave for a few seconds. Don't forget to use the pepperoncini in the sandwiches!

- Salt and pepper the beef roast. Heat a large skillet over high heat with the canola oil. Add the roast and sear each side for 2-3 minutes until it forms a golden seared crust. Place the roast in a 5 quart slow cooker.
- Add the beef consommé, italian seasoning, garlic powder, italian seasoning and pepperoncini to the slow cooker. Top roast with butter slices.
- Cook on low for 8-10 hours or high for 5-6 hours. Shred the roast with a fork. Serve on hoagies topped with provolone cheese and additional pepperoncinis if desired.

- Season the beef roast with salt & pepper. Heat the olive oil in a skillet over medium-high heat. Once heated, add in the roast. Brown on all sides.
- Place the browned roast in the slow cooker. Sprinkle the Italian salad dressing mix over the roast. Pour in the beef broth, pepperoncinis, and juice from jar. Cook on Low for 6-8 hours.
- During the last 40 minutes of slow cooking, transfer the roast to a cutting board. Allow it to rest for 10 minutes. Then shred the meat using 2 forks. Return the shredded meat back into the slow cooker for the remainder of the cooking time.
