- Preheat oven to 350 degrees. Lightly coat 8" or 9" square baking dish with cooking spray.
- FILLING:.
- Thinly slice celery and coarsely chop onion. In 12" skillet, melt 3 T butter and sauté 2 minutes. Pour into medium sized mixing bowl. In the same skillet, heat olive oil; add chicken breasts cut into ¾" cubes and 1 tablespoon of seasoning mix. Stir well and sauté just until chicken is no longer pink. Pour into mixing bowl with vegetables. Reserve 1 teaspoon of seasoning mix for the topping. Add remaining mix to bowl along with the next 7 ingredients. Stir gently to combine well. Pour chicken mixture into prepared baking dish.
- TOPPING:.
- In the same skillet, melt 2 tablespoons butter. Stir in Panko bread crumbs, sliced almonds and the 1 teaspoon of reserved seasoning mix. Toss just until well coated. Sprinkle topping on chicken filling mixture.
- Bake for 30 minutes until bubbly and topping is golden brown. Makes four generous, delicious servings.

Also would make a good sandwich. ***NOTES*** 3/1/2009, I just saw this recipe printed in a new magazine and they now have you add one tablespoon of flour to the crushed French Fried onions. It helps the pieces adhere to the chicken better. 10/19/2010, one of the reviewers offered a new tip: substitute a flavored mustard for the egg if you enjoy the tanginess of mustard. Great idea!

- Preheat oven to 450 degrees F. Arrange chicken breasts in an ungreased 9x13-inch baking dish; set aside.
- In bowl, combine soup, 1 cup of the cheese and taco seasoning; spread over chicken. Bake for 45 minutes. Sprinkle with corn chips and remaining cheese. return to oven and bake until cheese melts, about 5 minutes.
- Variations:
- 1. You can use other chips crackers or even cornflakes. This is a great way to use up stale chips.
- 2. Use a different flavor of creamy soup. Cream of mushroom would be great. So would a can of creamed corn.
- 3. Toss some frozen peas, green beans or broccoli into the soup mixture for a veggie boost.
- 4. For a spicy kick, add a can of canned chili peppers.
- 5. Instead of chips, top the chicken with some chopped walnuts or almonds for a protein boost.
CRUNCHY CHICKEN
I have a severe egg allergy and growing up my mom was always looking for recipes that both her kids would like and she could make without much hassle. Similar to chicken parm but baked and not using any eggs this was and still is a family favorite. Many a night we would ask my mom for "Crunchy Chicken and 'sketti" (meaning spaghetti).

- Preheat oven to 375 degrees.
- Line the bottom of a baking dish large enough to lay out the chicken in with foil.
- Give a quick spray with a cooking spray to avoid sticking later.
- Place italian dressing in one bowl and breadcrumbs in another.
- Measurements are a guesstimate, but you want enough of both to coat the chicken.
- Dip chicken in dressing and then coat in breadcrumbs and place in baking dish.
- Repeat with all 4 breasts.
- Cover dish with foil and place in oven, bake for 30 minutes.
- Remove foil cover, bake for another 30 minutes.
- Keep in mind that the thinner your chicken breasts are the faster your chicken will cook, so you may want to check the last 10 minutes of cooking to make sure your"crunchy chicken" hasn't turned into"crispy chicken"!
- Serve with pasta, with or on a green salad or prepare similar to chicken parm, adding a little red sauce and mozzarella the last few minutes of baking.

- Brown chicken breasts in melted margarine, remove and set aside.
- Saute mushrooms and onions in the same pan until tender.
- Return chicken to pan.

"Ready, Set, Cook! Hidden Valley Contest Entry" This recipe is an example of a layered Persian tah-dig dish. I developed an interest in Persian foods while surfing the internet. I was amazed at how many ways this rice dish can be prepared. I experimented and put my on spin to this dish. I usually prepare this dish in my Persian rice cooker. However, this recipe was prepared in a 13 inch non-stick skillet.

- In a skillet, cover the chicken breasts, shallots, lemon juice, and turmeric with water. Bring to a boil on medium-high heat. Reduce temperature and simmer for one hour. Reserve the stock. Cool and cut the chicken into small pieces.
- Wash and drain the rice. Bring six cups of water and 1/4 teaspoon turmeric to a boil in a large pot. Add rice and boil uncovered for ten minutes. Drain and rinse the rice in cool water.
- In a food processor, combine yogurt, egg yolks, Hidden Valley Original Ranch Seasoning Mix, lemon zest, chives, salt, and pepper. Process for 30 seconds or until all ingredients are thoroughly combined. Add 2 cups of the rice to the yogurt mixture. Process for 15- 20 seconds.
- Dissolve the saffron into 3 tablespoons of the chicken stock.
- Lightly brush one side of the sweet potato slices with a tablespoon of olive oil. Cover the bottom of a large non-stick skillet with two tablespoons of olive oil and 1/2 teaspoon of the saffron mixture. Layer 2/3 of the rice and yogurt mixture in the bottom of the pan. Line the edges of the pan with the sweet potatoes.
- Layer the chicken on top of the mixture. Spoon on the rest of the yogurt mixture. Spread it as evenly as possible. Add the remaining rice. Flatten the rice with the back of a spoon. Combine three tablespoons of chicken stock with the remaining saffron mixture. Drizzle over the top of the rice layer.
- Cook covered on medium heat until it begins to steam. Reduce temperature to low and cook for one hour. Cool, then place a large plate over the top of the pan. Carefully invert the pan. Garnish as desired. Top with a dollop of Greek peach on the bottom yogurt and sweet mango chutney.

- Rinse off both chicken breasts and dry them off. Cut both long ways down the middle to make 4 separate breasts. Lay them out on a parchment paper lined cookie sheet. Pour 1/8 cup of Franks Red Hot Sauce over each breast.
