CHEWY BROWNIE COOKIES
This is a delicious cookie recipe. My nephew and niece cannot stop eating them! Deliciously chocolatey goodness in every bite. The best part is, they are nice and soft, which is the way I like them.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Beat vegetable shortening and sugar with an electric mixer in a large bowl until smooth. Beat in one egg until completely incorporated. Beat in last egg along with vanilla extract and water. Combine flour, cocoa powder, baking soda, and salt in a small bowl. Stir flour mixture into creamed mixture at low speed until just blended; fold in chocolate chips. Drop spoonfuls of dough 2 inches apart onto ungreased baking sheets.
- Bake in preheated oven until cookies are set, 7 to 9 minutes. Cool 2 minutes on baking sheet; transfer cookies to wire racks to cool completely.

Steps:
- In a small mixing bowl combine flour and baking powder.
- Beat oil, sugar, and cocoa together in a large mixing bowl. Add eggs to oil and cocoa mixture one egg at a time, beating well after each addition. Stir in vanilla. Mix in flour mixture. Fold in nuts if desired. Chill the dough overnight.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet.
- Roll dough into walnut-size balls and roll each ball in confectioners' sugar.
- Bake cookies for 12 to 15 minutes.

- Preheat oven to 350 degrees F. Line a baking sheet with parchment.
- In a medium bowl, whisk the flour, cocoa, salt and baking powder together.
- In another (large) bowl, beat butter and sugar with electric mixer until fluffy. Add eggs, one at a time, scraping down sides of bowl. Mix in vanilla.
- Gradually mix in dry ingredients. When combined. scrape dough onto a piece of plastic wrap and wrap tightly. Refrigerate 1 hour.
- On a floured surface, roll dough to 1/4 inch thickness. Cut into desired shape using a 1 1/2 inch cutter, brushing extra flour off tops.
- Bake 8 to 11 minutes, until edges are firm and centers are slightly soft and puffed. Transfer to a wire rack to cool.
CHEWY BROWNIE COOKIES
Off a Golden Crisco package. WOW! Are these good! My husband and I couldn't stop eating (I'm ashamed to admit). We omit the nuts, as our daughters are allergic to peanuts (and it is difficult to find nuts that are not cross-contaminated).

- Preheat oven to 180°C (350°F).
- Combine Crisco, white sugar, brown sugar and vanilla in a large bowl.
- Beat with mixer on low speed 1 minute or until creamy.
- Add beaten eggs.
- Combine flour, cocoa, baking soda and salt.
- Add to creamed mixture alternately with milk, beating on low speed about 1 minute, or just until blended.
- Stir in nuts and chocolate chips.
- Drop by heaping spoonfuls* (about 2 TBSP for each cookie) on ungreased cookie sheet.
- Bake cookies, leaving about 7cm (3-inches) between cookies for spreading.
- Bake at 180°C (350°F) for 10-12 minutes.
- Cookies wil appear soft and moist when baked, but firm upon cooling.
- Cool 2 minutes, then remove to cooling rack.
- *Smallercookies can be made using 15mL (1 TBSP) dough for each cookie; Bake 8-10 minutes; makes about 6 dozen cookies.

- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
- Put the chocolate in a microwave-safe bowl and melt it in the microwave. Stir and let cool.
- Using an electric mixer, mix together the sugar and butter in a large bowl until totally combined. With the mixer on low, slowly drizzle in the cooled chocolate. Scrape the bowl and mix again. Mix in the eggs one at a time, then the vanilla. Scrape the bowl once more and mix.
- Combine the flour, cocoa powder, baking powder and salt in a bowl and stir it together. Add it in scoops to the mixing bowl with the mixer on low. Scrape the bowl once and mix one final time until all combined.
- Scoop generous tablespoons of the dough onto the prepared baking sheet, then bake until the cookies are poufy and set, 11 to 12 minutes. Let them sit on the baking sheet for 1 to 2 minutes, then remove them to a wire rack to cool completely. Repeat with the remaining dough.
- Once cool, sprinkle generously with powdered sugar.
