  • In a bowl, beat eggs. Add sugar, salt and vanilla. Gradually add milk; mix well. Stir in coconut. Place six ungreased 10-oz. ramekins or custard cups in a 13-in. x 9-in. baking dish. Fill each with about 3/4 cup coconut mixture. Sprinkle with nutmeg. Fill larger pan with boiling water to a depth of 1 in. Bake at 325° for 30-40 minutes or until center is just set (mixture will jiggle). Remove ramekins from pan to a wire rack., In a saucepan, combine cornstarch and water until smooth. Add raspberries, sugar and salt. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; strain if desired. Cool. Serve over custard.

22-Minute Coconut Chicken Curry image

Steps:

  • Toss chicken with curry powder, salt, and pepper in a medium bowl.
  • Heat 2 Tbsp. oil in a large skillet (at least 12" in diameter) over medium-high. Add onion and cook, stirring, until softened, about 2 minutes.
  • Purée coconut milk, ginger, and garlic in a blender until very smooth.
  • Add chicken and coconut milk mixture to skillet and cook, tossing occasionally, until chicken is cooked through and sauce has thickened, 7-10 minutes.
  • Meanwhile, if using, heat 2 tsp. oil in a small skillet over medium. Add cashews and mustard seeds and cook, stirring, until fragrant and lightly browned, 2-3 minutes. Immediately transfer mixture including the oil to a small bowl.
  • Fold spinach into chicken mixture and cook until wilted, about 1 minute. Divide among 4 bowls. Top with cilantro and cashew mixture, if using. Serve with rice or naan alongside.

Steps:

  • Preheat oven to 400 degrees. Press a sheet of aluminum foil onto crust, draping over rim of pie plate. To blind-bake: Fill with dried beans or pie weights. Bake until crust is lightly browned, about 45 minutes. Remove beans and foil; let crust cool completely, and set aside.
  • While crust is baking, place a fine-mesh sieve over a large bowl; set aside. In a medium saucepan (off heat), whisk together sugar, cornstarch, and salt. Gradually whisk in whole milk, making sure to dissolve cornstarch. Whisk in coconut milk and egg yolks.
  • Whisking constantly, cook over medium heat until the first large bubble sputters, about 5 minutes. Reduce heat to low; cook, whisking constantly, 1 minute. Remove pan from heat; immediately pour custard through sieve into bowl.
  • Pour custard from bowl into cooled crust; smooth top with a rubber spatula. Refrigerate until chilled, at least 4 hours (or loosely covered, up to 1 day). To serve, let stand at room temperature 30 minutes, then sprinkle with coconut.

  • Cook and stir milk, vanilla extract, and butter in a saucepan over medium heat until simmering. Remove mixture from heat before it comes to a boil.
  • Whisk eggs, sugar, and cornstarch together in a bowl until sugar dissolves.
  • Set saucepan back over low heat. Pour in egg mixture slowly, whisking constantly, until custard thickens enough to coat the bottom of a spoon, 5 to 10 minutes.

  • Combine the milk, coconut milk and vanilla bean and seeds in a medium nonreactive saucepan; bring to a simmer over low heat.
  • Whisk the egg yolks, sugar and cornstarch together in a large bowl. Slowly whisk the warm milk into the egg mixture. Return the mixture to the pan, set it over medium heat and bring to a boil. Cook, whisking constantly, until thickened. Scrape the mixture into a bowl, remove the vanilla bean and whisk in the rum and vanilla extract. Old Fashioned Coconut Custard Pie image

Steps:

  • Prepare and chill the dough.
  • Set a rack at the middle level of the oven and preheat to 350 degrees.
  • Use a large nail or an ice pick to puncture one of the three eyes on the coconut (only one can be punctured so you will need to try each until you find it). Drain the coconut milk out over a bowl. Strain it to remove any flecks of shell and reserve it.
  • Place the coconut on the oven rack and bake it until it cracks, about 10 to 15 minutes.
  • Remove the coconut from the oven and let it cool slightly. Remove shell (it will come away easily), then cut the coconut meat into 8 or 10 pieces. With a vegetable peeler, remove brown skin. Coarsely grate 1 cup coconut, either by hand or in the food processor, and reserve it for the filling. Process the remaining coconut until it is very fine.
  • In a large saucepan over low heat, scald the milk until there are bubbles around the edges. Add the finely processed coconut. Remove from the heat and allow the mixture to cool completely. Pour it through a fine strainer into a bowl; press coconut to extract as much moisture as possible.
  • In 3 or 4 batches, place coconut in the corner of a clean dish towel and wring out over bowl to extract all remaining liquid. (If you wish, you can toast the wrung out coconut, though it will have very little flavor remaining after soaking in the milk.) Measure the coconut flavored milk and add more milk, if necessary, to make 2 cups. (This may be done earlier in the day or even the day before and set aside tightly covered in the refrigerator.) Pour into a bowl and whisk in sugar, eggs, vanilla and nutmeg and the reserved coconut milk. Stir in the reserved coarsely grated coconut.
  • Set a rack in the lowest level of the oven and preheat to 350 degrees. Roll out the dough for the bottom crust and arrange in pan.
  • Pour filling into pie crust. Bake the pie for about 45 minutes, until the crust is baked through and the filling is set, but not over-cooked. After the pie has baked for 30 minutes, check it frequently so it does not over-cook. Once the pie is wobbly textured when the pan is gently shaken, remove it from the oven; it will continue to cook for a few minutes longer after it is removed from the oven. If the pie is over baked, it will be heavy and watery. Cool the pie on a rack.
  • To mix the dough by hand, combine flour, sugar, salt and baking powder in a medium mixing bowl and stir well to mix. Cut butter into 1-tablespoon pieces and add to dry ingredients. Toss once or twice to coat pieces of butter. Then using your hands or a pastry blender, break the butter into tiny pieces and pinch and squeeze it into the dry ingredients. Occasionally reach down to the bottom of the bowl and mix all the ingredients evenly together. Continue rubbing the butter into the dry ingredients until the mixture resembles a coarse-ground cornmeal and no large pieces of butter remain visible. Beat the egg(s) in a small bowl and pour over the flour and butter mixture. Stir in with a fork until the dough begins to hold together, but still appears somewhat dry. Scatter a teaspoon of flour on the work surface and scrape the dough out onto it. Press and knead the dough quickly 3 or 4 times, until it is smooth and uniform.
  • To mix the dough in the food processor, combine flour, sugar, salt and baking powder in work bowl fitted with metal blade. Pulse 3 times at 1-second intervals to mix. Cut butter into 1 tablespoon pieces and add to work bowl. Process, pulsing repeatedly at 1-second intervals, until the mixture is fine and powdery, resembles a coarse-ground cornmeal and no large pieces of butter remain visible, about 15 pulses in all. Add the egg(s) to the work bowl and pulse ten times or so, until the dough forms a ball. Scatter a teaspoon of flour on the work surface and scrape the dough out onto it. Press and knead the dough quickly 3 or 4 times, until it is smooth and uniform. Press the dough into a disk (two equal disks for the larger amount of dough). Sandwich the disk(s) of dough between two pieces of plastic wrap and press it into a 6-inch circle. Refrigerate the dough until firm, or until you are ready to use it, at least 1 hour.
  • Storage: Keep the dough in the refrigerator up to two days, or freeze it double-wrapped in plastic. Because the dough is thin, it will defrost quickly at room temperature when you intend to use it.

Steps:

  • Have all ingredients ready before you begin.
  • Lay out one of the kitchen towels, open the filo package, unroll and place on the towel. Cover with the second towel.
  • Place a whole sheet of filo onto one of the sheet pans, brush with melted butter mixed with honey and sprinkle with pistachios.
  • Repeat two more times, but on last layer sprinkle with sugar.
  • Cut into six equal squares.
  • Place a square into a greased muffin tin, pressing gently down to fit form, leave tips sticking up or slightly laying over.
  • Bake at 375 degrees until golden and crispy, approximately 10 minutes.
  • Bring the milk to a boil.
  • Mix couscous, cinnamon, ginger, butter and salt together.
  • Pour milk over the couscous mixture and mix to break up any lumps.
  • Bring cream, sugar and vanilla to a boil.
  • Combine egg yolks in a small bowl, add half of boiled cream to egg yolk mix.
  • Return egg yolks to boiling cream and whisk until thickened, do not boil.
  • Strain and pour into couscous mixture, stir and cool.
  • Return to pot and cook to boil, remove from heat.
  • Place mixture in bowl, cover with plastic and refrigerate overnight
  • In a medium nonreactive saucepan, combine sugar and water, bring to a boil.
  • Add quince, cinnamon, cloves and lemon juice, reduce the heat to low.
  • Simmer, stirring occasionally, until fruit is tender and translucent, remove from heat, pour into bowl to cool.
  • Strain quince from liquid and puree 1/4 of the quince.
  • Add the puree to the left over quince and add additional poaching liquid to moisten slightly (to make it a spoonable sauce).
  • To Assemble:
  • Place filo dough on plate, spoon some couscous custard into the cup.
  • Spoon some quince compote onto the plate, garnish with whipped cream, mint and a few berries.

  • In a large bowl, combine the first five ingredients; press lightly into a greased 13-in. x 9-in. baking dish.   • Preheat oven to 350 degrees. Spread coconut in a single layer on a baking sheet. Toast in oven, tossing once or twice, until lightly browned, 8 to 10 minutes. Reserve 2 tablespoons for garnish.
  • In a small saucepan over medium heat, cook milk and sugar, stirring often, until sugar dissolves and mixture begins to bubble around the edges, about 5 minutes. Remove from heat; stir in coconut. Cover tightly; let stand 15 minutes.

Steps:

  • Preheat oven to 350°F
  • Puree the bananas in a food processor.
  • Then add the coconut milk, eggs and sugar into the food processor and pulse until well mixed.
  • Pour the banana custard mixture out into a bowl and stir in the shredded coconut.
  • Butter eight 1/2-cup ramekins.
  • Pour the banana custard into the ramekins, about 3/4 way up.
  • Place the ramekins in a baking pan and pour enough hot water into the pan, water should come halfway up the sides of the ramekins.
  • Bake the custards until just set, about 20 minutes.
  • Immediately remove the ramekins from the hot water bath and place them on a rack to cool.
  • Just before serving, sprinkle the custards evenly with about 1 tablespoon of sugar.
  • Turn the oven to broil.
  • Place the custards back into the oven, at least 4 inches from heating element, until sugar caramelizes, about 2 minutes.
  • Garnish with the chopped candied walnuts.

CUSTARDY FRENCH TOAST

This is the only way that my family has been making, and eating, French Toast since I was a wee girl. The slices turn out wonderfully "eggy" tasting; just like the best of bread pudding. We would make it one of two ways: either dip and fry or overnight and bake. Each way has it's own merits, so I continue to make them with both versions, depending upon the time I have each weekend. Although we used only cinnamon-raisin bread as a child, I've used wheat, white, artisan and sourdough breads as an adult...but I always return to the original cinnamon-raisin bread as my hands down favourite.

Custardy French Toast image

Steps:

  • Directions for immediate French Toast: Yield 8 slices.
  • Beat eggs, milk, sugar, salt, extracts and cinnamon in a large bowl with a spout. Beat only until well-combined but not excessively frothy.
  • Strain the egg mixture into an 8" x 8" pan to dip the bread into. Straining the mixture removes any egg whites not incorporated into the custard.
  • Heat butter in a skillet large enough to handle four slices of bread. When butter begins to sizzle, lay all four slices of bread in the pan. Allow to soak for 10 seconds, flip over the slices, and continue to turn the slices onto each side until you can feel the weight increase but the bread still holds it's shape.
  • Lay each slice into the hot pan and cook on each side at least 4 minutes before turning, so the egg custard sets up in the bread and doesn't tear when turned.
  • Flip over to the other side when first side is golden brown. Serve immediately with maple syrup, honey, powdered sugar or preserves. Repeat with additional four slices.
  • Directions for Over-Night French Toast:.
  • Arrange the 6-8 bread slices in a 9" x 13" pan, or use 4 slices in an 8" x 8" pan, using 1/2 of the custard for the next day. Beat eggs, milk, sugar, salt, extract and cinnamon in a bowl with a spout. Beat only until combined, not until it's frothy.
  • Using a strainer, strain the custard mixture over the sliced bread; turn once, to make sure that the bread is well coated. Cover, refrigerate overnight.
  • Preheat the oven to 350 degrees. Uncover the pan and bake for 30-40 minutes, until the bread is puffed up and slightly golden brown. Cut into slices and serve with topping of your choice.

4 slices cinnamon raisin bread (or which ever type you'd enjoy. I use Sunmaid Cinnamon Swirl Raisin Bread)

1/2 teaspoon almond extract
1/2 teaspoon ground cinnamon
2 tablespoons butter (for fry pan or grill)

COCONUT-CARAMEL CUSTARD

This recipe is by Nicole Rauthier and is best enjoyed the day AFTER making to let the custard set properly and allow the flavours to mellow and marry. Baking time is 50 minutes for one large flan and 30 minutes for ramekins.

Coconut-Caramel Custard image

Steps:

  • Preheat the oven to 325F.
  • Make the caramel: Cook the sugar in a small heavy saucepan over low heat, swirling the pan constantly, until brown.
  • Stir the hot water into the caramel, being careful to guard against splattering (the mixture will bubble vigorously).
  • Boil the mixture, swirling the pan occasionally, until the sugar is thoroughly dissolved, about 2 minutes.
  • Pour the caramel syrup into a 1-quart souffle dish or five 4-ounce ramekins.
  • Tilt the molds to coat all of the surfaces with caramel.
  • Make the custard: Combine the coconut milk, milk and sugar in a medium saucepan over low heat.
  • Scald until the sugar dissolves completely.
  • Remove from heat.
  • In a large bowl, whisk the eggs and vanilla.
  • Gradually whisk the hot coconut milk mixture into the eggs, blending thoroughly.
  • Strain the custard through a fine sieve into a bowl.
  • Carefully pour into the caramel-lined souffle dish or ramekins.
  • Line a large roasting pan with 2 layers of paper towels (see Note).
  • Put the souffle dish in the roasting pan and add hot water to reach halfway up the side of the dish.
  • Bake in the center of the oven for 50 minutes (30 minutes if using ramekins), or until a knife inserted in the center comes out clean.
  • Be careful not to let the water boil; do not disturb the custard while baking.
  • This is the only"secret" to producing a smooth and velvety custard.
  • Remove the souffle dish immediately from the hot water.
  • Allow to cool in a cold-water bath.
  • Chill thoroughly.
  • To serve, run a knife around the edge of the custard and turn out onto dessert plates.
  • Serve with whipped cream, if desired.
  • Note: The paper towels in the roasting pan serve a twofold purpose: First, they allow the hot water to circulate under the souffle dish while baking to distribute the heat evenly; second, if using small ramekins, it stabilizes them and keeps them from moving around while baking.
