CUCUMBER SIDE CAR
I do not remember where I got this recipe. We hosted a family reunion in Durango, Colorado. We served this as one of the side dishes. This recipe is great with barbecue and can be made ahead of time. I have never timed how long it takes to make but am guessing about 20 minutes. Note: The last time I made this, I used a slicer I bought. The cucumbers were sliced very thin. They really need to be a little thicker to avoid getting too limp in the liquid that collects.

Steps:
- Slice the cucumbers.
- Slice rings of onion.
- Add all ingredients and toss with vegetables.
- Make well in advance. The liquid from the cucumbers blend and make a sauce.

- Prepare vanilla sugar to rim the glass the day before: Cut the vanilla bean lengthwise in half and scrape out the seed. Add the seed to the sugar and make sure the seeds are well-mixed with the sugar. Place the mixture in an airtight container and let rest overnight.
- Coat the glass rim with sugar: Place vanilla sugar in a shallow bowl or on a plate. Moisten the edge of a martini glass by rubbing a wedge of the blood orange around the rim. Hold the glass upside down above the sugar and spoon vanilla sugar over the outer rim of the glass.
- Add Calvados, Grand Marnier, lemon juice, blood orange juice, and ice into a cocktail shaker. Shake for approximately 10 seconds and strain into prepared glass.
- If you want to make a batch of drinks ahead of time for a party, you can combine all of the ingredients without ice and keep it refrigerated in a pitcher. Then when one of your guests wants a drink, simply add ice to a cocktail shaker, pour in the sidecar mixture, shake, strain, and serve.

- Fill a cocktail shaker 3/4 full with ice cubes. Pour in lemon juice, Cointreau, and brandy. Cover and shake vigorously for about 30 seconds until the outside of the shaker becomes cold and frosty. Strain into a martini glass and garnish with a wedge of lemon.

- Sprinkle sugar on a small plate. Lightly wet half the rim of of a coupe glass with a damp paper towel. Dip the moistened rim in sugar to coat. Set the glass in the refrigerator to chill.

QUICK PICKLED CUCUMBERS
After lingonberry preserves, these pickled cucumbers are the most popular condiment in Scandinavia. They are a traditional accompaniment to Swedish Meatballs, simple salmon dishes, and roasts and other meats. They are even served with frankfurters sold at street kiosks, much like the sauerkraut that often tops the hot dogs sold here.

- 1. Slice the cucumber as thin as possible (use a mandoline or other vegetable slicer if you have one). Put the slices in a colander, toss them with the salt, and let stand for about 30 minutes.
- 2. Meanwhile, combine the water, vinegar, sugar, bay leaf, and allspice in a medium saucepan and bring to a boil. Remove from the heat and let cool.
- 3. Rinse the salt off the cucumbers, and squeeze out as much moisture as possible. Put the cucumbers in a medium bowl and add the pickling solution; they should be completely covered by the brine. Cover and refrigerate for 3 to 6 hours before serving. The pickled cucumbers will keep in the refrigerator for up to 5 days.
