CURRANT TEA CAKES
Came across these while looking for a tea biscuit recipe in all of my cookbooks. Not exactly what I was looking for, but very good and easy.

Steps:
- Cream butter, lemon peel and lemon juice until light.
- Add sugar and cream until light and fluffy.
- Add eggs and blend well.
- In another bowl, mix flour and salt; gradually add to creamed mixture, beating well until blended.
- Stir in currants.
- Drop by teaspoonsful onto greased and floured baking sheet.
- Bake at 350* for 10 minutes or until set.
- Remove to a wire rack to cool.

Spare a bit of time to bake these delicious teacakes which you can serve warm with butter for a weekend breakfast, coffee morning or afternoon tea

Steps:
- Warm the milk with the butter in a pan until the butter has melted, then add 100ml water to cool the mixture to room temp. Tip the flour, yeast, sugar, spice and 1 tsp salt into a bowl, making sure the yeast is on the other side of the bowl to the salt. Make a well in the flour mixture and pour the milk and butter in, mixing until it forms big flakes, then bring together with your hands. Tip on a surface and knead until smooth (about 5 mins). Put the dough into a large, lightly oiled bowl, cover with a damp tea towel and leave until doubled in size, so about 1-1 ½ hours.
- Line a tray with baking paper. Tip the mixed dried fruits into the dough and knead them in, trying to disperse them evenly throughout the dough. Cut your dough into 6 even-sized balls, take each ball and, using the cup of your hand, and pressing down a little with your palm, roll the ball in a circular motion on the surface to create tension across the top of the bun and a neat round shape. Place onto a tray about 5cm away from each other and press down with your palm to flatten the dough down a little, creating the teacake shape. Cover loosely with an oiled sheet of cling film, for a further 45 mins, or until they have doubled in size.
- Meanwhile, heat the oven to 200C/180C fan/gas mark 6. Brush the top of each bun liberally with the egg wash, then bake for 20 mins on the top shelf of the oven, until the buns are golden and well risen. Allow to cool on a wire rack, then slice in half, toast and slather with butter if you like.

MOM'S CURRANT CAKE

- Preheat the oven to 325 degrees. In a medium bowl, sift together the flour, baking powder, and salt. Set aside. Butter a 9-by-5-inch loaf pan; set aside.
- In a small saucepan, heat the cream over medium heat. Stir in molasses. In a medium bowl, cream the butter until light and fluffy. Gradually add the sugar. Beat in the eggs, one at a time, beating to combine after each addition. Stir in the cream mixture, then the currants. Add the dry ingredients and beat to combine.
- Pour into prepared pan, and bake until a knife inserted in the center comes out clean, about 1 hour 15 minutes.
EASY IRISH TEA CAKE
Currants are soaked overnight in cold tea overnight and then cooked into a simple cake. Great with a cuppa. Simple and no mix-master needed I haven't tried to make this recipe with gluten free flour as yet.

Steps:
- Soak currants in the tea and add the brown sugar. Leave fruit overnight to soak.
- Next day add the self-raising flour and the SR Flour and the lightly beaten egg.
- Mix well with a wooden spoon and place into a greased and lined small loaf tin. I think these are also referred to as a bar tin.
- Bake in a pre-heated moderate oven for about 1 hour. Turn out and cool.
- Serve sliced and buttered. This loaf keeps very well for at least a week.
- Cooking and prep time does not include overnight soaking of the currants.

CURRANT CAKE

Steps:
- Preheat oven to 200ðC/400ðF/Gas 6. Lightly dust a flat baking tray with flour.
- Sieve the flour, baking powder and salt into a mixing bowl. Add the sugar and mix well.
- Rub the margarine or butter into the dry ingredients until mixture resembles breadcrumbs. Add the sultanas or raisins and mix through.
- Finally, add the egg and sufficient milk to make a soft dough, not too wet or sticky! Turn onto a lightly floured board and gently knead, just enough to bring the dough together.
- Transfer to the prepared baking tray and shape into a round 1 1/2â deep. Cut a cross on top and bake for about 40 minutes until golden brown.
KEKS (RUSSIAN TEA CAKE) WITH YOGURT AND CURRANTS
Variation on my cousin's wonderful recipe, which traditionally uses sour cream and raisins. Here, individual little kekses are made with currants and natural yogurt for a lighter, more fruity flavour. Perfect with tea or as a lunchtime treat.

- Preheat the oven to 370 F (190 C), and grease and/or line 12 muffin holes.
- Beat eggs with sugar and vanilla.
- Add oil, yogurt, baking soda and most of the flour, reserving about 2 tbsp in a cup.
- Stir currants into the reserved flour and mix until currants are evenly coated.
- Quickly stir currants through the batter, which should be a very thick pouring consistency, heavy enough to support the currants. If they sink at this stage, the batter is too slack -- add a tablespoon of flour and give the mixture another quick stir.
- Divide mixture evenly between the muffin holes. Alternatively, make one whole loaf in a bundt pan or small loaf tin.
- Bake for 20 mins, or until golden on top and a skewer inserted into the centre of one keks comes out clean.
- If desired, dust with icing sugar.

- Place flour in a large bowl; cut in butter until mixture resembles coarse crumbs. Add the sugar, oats and nutmeg. Stir in the eggs and milk. Fold in currants., On a heavily floured surface, roll out dough to 1/4-in. thickness. Cut with a floured 2-1/2-in round cookie cutter. Place 2 in. apart on greased baking sheets. Sprinkle with sugar if desired. , Bake at 350° for 12-16 minutes or until lightly browned. Remove to wire racks to cool.

BLACK CURRANT POUND CAKE
I have not tried this yet, but it uses Black Currant Tea, which is one of my favorite tea flavors. I have a feeling other teas would also work. From Cooking Light (October 2003).

Steps:
- Preheat oven to 350F°.
- CAKE: Pour 2/3 cup boiling water over 6 tea bags in a bowl; steep 10 minutes.
- Remove and discard tea bags; cool tea to room temperature.
- Stir in sour cream.
- Combine flour, baking powder, and salt, stirring with a whisk.
- Place sugar and butter in a large bowl; beat until well blended or about 5 minutes.
- Add eggs, 1 at a time, beating well after each addition.
- Beat in vanilla.
- Add flour mixture and brewed tea mixture alternately to sugar mixture; mix after each addition.
- Spoon batter into a 10-inch tube pan coated with cooking spray.
- Bake for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 15 minutes on a wire rack.
- Remove from pan; cool completely on wire rack.
- GLAZE: Pour 1/4 cup boiling water over 1 tea bag in a medium bowl; steep 5 minutes.
- Remove and discard tea bag.
- Add powdered sugar and juice to brewed tea, stirring well with a whisk.
- Drizzle glaze over cake.
