DAD'S FAVORITE CASSEROLE
This is a great church potluck recipe -- a heavier meal, but good for those cold days after shoveling snow....

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a large casserole dish.
- In a skillet over medium heat, cook the ground beef until evenly brown. Drain grease. Mix in garlic, and season with salt and pepper. Stir in spinach, and cook until heated through. Stir in the uncooked egg noodles, and transfer to the prepared casserole dish. Mix in cream of mushroom soup and milk, and sprinkle with cheese.
- Bake 45 minutes in the preheated oven, until bubbly.

DAD'S CASSEROLE
This is an old recipe made by my family for many years. It is comfort food at its best! Creamy, tasty and warm. Great on a cold night.

Steps:
- Grease 9x13 pan.
- Bring pot of water to boil. Add noodles. Cook until 1/2 tender.
- While noodles are cooking, brown hamburger with onion until brown.
- Remove hamburger from heat and add cottage cheese.
- Mix hamburger mixture and noodles together.
- Pour into 9 x 13 pan.
- Mix together cream of mushroom soup, milk and egg. Pour over the above mixture.
- Top with grated cheese.
- Bake 45 min at 350*.

BIG DADDY PARFAIT

Steps:
- In a small bowl, mix orange zest, sugar and coconut. Set aside.
- In large 2-quart dish or big martini glass start assembling parfait by layering granola, yogurt and then fruit, bananas, strawberries, blackberries and blueberries. Repeat until all is layered. Sprinkle coconut mix over fruit.
- In a large bowl, fold pineapple into whipped cream and put a scoop on top of each serving. Garnish with mint.

Steps:
- Heat oven to 350°F.
- Spray 2-3 quart casserole with non-stick cooking spray.
- Cook noodles as directed on package.
- Brown beef with garlic until cooked through.
- Drain.
- Add salt, sugar and tomato sauce and simmer for 5 minutes.
- Combine sour cream, cream cheese and onion.
- Layer 1/2 of the noodles then 1/2 of the meat mixture in casserole dish.
- Spread with sour cream mixture.
- Top with remaining noodles and the tomato sauce.
- Bake for 30 minutes.
- Sprinkle grated cheese on top and bake for another 5 minutes.
- ENJOY!

My daughter and I created this for Father's Day. It is easy to make in a short amount of time.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink, about 5 minutes. Drain and discard any excess grease. Stir in the hash brown potatoes, cooking and stirring until potatoes are browned, about 5 minutes more.
- Line the bottom of the prepared baking dish with a layer of buttermilk biscuits, splitting the biscuits in half to completely cover the dish. Years ago DH was closing up his apartment after a hard semester at school. He was down to only a few items in the kitchen: a boxed macaroni and cheese dinner, 1 can of peas and 1 can of tuna. The result was this dish that has come in so handy over the years. Our kids still love it.
