DAHI BARFI (SWEET YOGURT BARS)

This is an easy and fast Nepalese desert made with yogurt raisins and cashews. It uses no eggs and very little flour so it looks like it could be made gluten-free. Cooking time doesn't include cooling time. Found online and slightly modified for ZWT6.

Steps:

  • Preheat oven to 200 degrees.
  • Mix all ingredients in a large bowl and pour the mixture in a 8x8 pan.
  • Bake 20 minutes or until set in the center. Allow to cool and cut in squares.

Frozen Yogurt Bars image

Steps:

  • Place yogurt, fruit, dry milk and honey in blender and blend until smooth.
  • Fold in 1 1/2 cups of the cereal and pour into an 8 inch sqare pan.
  • Sprinkle with remaining cereal, pressing down gently.
  • Place in freezer for 4 hours or overnight.
  • Cut into 8 bars. If desired wrap bars individually in foil and store in freezer.

Blueberry & Yogurt Bars image

Steps:

  • Preheat oven to 350°F
  • Crumble graham crackers and Rice Krispies in a food chopper or food processor and whisk around until you have fine crumbs.
  • Mix the graham mix and the remaining bottom layer ingredients together to form soft dough. I do this with a wooden spoon or bare hands. There is no need to get out a mixer for this.
  • Firmly press the dough into a 9X13 pan. Completely cover the bottom of the pan in an even layer. Do not use a larger pan. You can use a smaller baking pan for a thicker bar.
  • Mix all the top layer ingredients together, except the blueberries, mixing well. A wire whisk works well. Again, don't bother to get a mixer out.
  • Gently mix in the blueberries.
  • Pour the top layer mixture in the pan over the bottom layer. Make sure the blueberries are spread out evenly.
  • Bake for 50-60 minutes.
  • Chill completely before cutting and serving. Although it is difficult to wait so long, chilling overnight will give the custard plenty of time to set.

YOGURT BARS With FRUIT & NUTS image

Steps:

  • In a small bowl, combine ¼ cup heavy cream with gelatin; stir to incorporate. In a small saucepan over medium-high heat, pour in the other ¼ cup heavy cream and when it gets hot but not boiling, add the gelatin mixture. Turn off the heat and whisk for a couple minutes. Remove from the heat and transfer into a large measuring cup.
  • When cool off, add yogurt, condensed milk and orange zest; whisk until well blended. Place a silicone mold over a baking sheet lined with a silicone mat. Pour yogurt mixture in each mold - if don't have one, use a baking dish.
  • Sprinkle on sunflower seeds evenly followed with pistachios and finally cranberries. Transfer to the fridge for 4 hours or the freezer for 2 hours. Makes 9 bars.
