Daikon Radish Salad image

Steps:

  • mix carrots and daikon
  • mix everything else but seeds together mix pour over radishs top with seeds.

2 cups daikon radishes, peeled grated
2 cups carrots, peeled grated
1 tablespoon ginger, crushed
2 tablespoons lemon juice
2 teaspoons soy sauce
1 tablespoon sesame oil
2 teaspoons rice wine vinegar
2 teaspoons mirin (optional)
2 tablespoons sesame seeds

DIAKON RADISH & CARROT SALAD

Banchan are veggie sides served with Korean food. Seasoned Mung Beans, Kimchi, and Diakon Radish & Carrot salad are just a few. Serve this with my Korean Beef Bulgogi. This salad is a yummy sweet and sour crunchy addition to the Bulgogi. It is a must have for me. Cook time is standing time.

Diakon Radish & Carrot Salad image

Steps:

  • Toss radish, carrot & salt together in large bowl.
  • Let stand for 10 minutes
  • Squeeze dry.
  • Combine vinegar & sugar in small Celsius
  • Stir until sugar is dissolved.
  • Pour over radish mixture.
  • Toss until well coated.
  • Refrigerate up to a week.

3 1/3 cups daikon radishes, peeled and sliced into match sticks
1/3 cup carrot, shredded (the presliced matchsticks in the produce section are perfect)
3 tablespoons granulated sugar
1/4 cup white vinegar (or rice vinegar )
1 1/2 teaspoons salt

  • Use firm Daikon Radish, grab one root and break off the greens. (the greens can be used if they are young and fresh for another dish such as in a stir-fry).
  • Then with a food processor, shred into small pieces and place into a salad bowl. Sprinkle the salt over the Daikon and mix. If you want to get rid of some water in the roots, then let the daikon sit with the salt for 15 minutes and then discard the water that has come out. I skip that step because I like my salad juicy.
  • Then add the simple marination to the salad which is the vinegar, oil and black pepper. Mix the whole content well.
