Steps:
- Mix fruit and orange juice and soak overnight.
- Next day add 2 cups self raising flour.
- Put in tin and bake for 1 or 2 hrs at 140-150°C.
- (Scrumptious) (Use skewer to test finish time. When skewer comes out clean cake is done).

YUMMY YUMMY FRUITCAKE
I received this recipe from an elderly lady several years ago. She bakes this cake yearly and give them away as Cristmas present. Best fruit cake I've ever eaten. This recipe makes about 10 lbs of cake.

Steps:
- Mix together softened shortening, brown sugar, white sugar, rum flavoring, water and eggs.
- Mix well.
- Add flour, baking powder, baking soda, salt, cloves, cinnamon.
- Mix well.
- Add glazed fruit mix and shelled walnuts.
- Mix well.
- Bake in 350 degree oven until a tooth pick inserted in the center comes out clean.
- Baking time depends upon size of pans you use.
- Let cakes cool about 5 minutes before removing them from the pans.
- Place them on waxed paper and put waxed paper over them to prevent them from becoming dry.
- I then cover them with a heavy towel until they are cold then wrap them in saran wrap to keep them moist.

- Line a 9x5-in. loaf pan with waxed paper; coat the paper with cooking spray; set aside. In a saucepan, combine milk and orange juice concentrate. Add marshmallows; cook and stir until marshmallows are melted and mixture is smooth. Remove from the heat. Stir in remaining ingredients; mix well. Pat into prepared pan. Cover and refrigerate for at least 8 hours.

This recipe I got from my dear Aunt who has been gone for over 30 years now. People who don't like Fruitcake love this one. This is the best one I have ever eaten, my daughter Christine can eat a 2 pound cake by herself. This cake is very rich.

Steps:
- Chop 1st four ingriedients.
- Mix eggs & sugar.
- mix flour with spices and baking powder.
- Layer cherries, sprinkle flour mixture, layer pecan.
- Layer pinapple, sprinkle flour mixture, layer pecans.
- Layer dates, sprinkle flour mixture layer pecans.
- Repeat layers till all used up.
- Pour egg and sugar mixture over fruit and nuts, mix well by hand.
- Line pans that are used with wax paper and packed with mixture and put in a 225* oven and bake till toothpick inserted comes out clean.
- Let cool and pull wax paper off.
- Wrap cake in Saran Wrap.
- May put 1/2 cherries and whold pecans on top to decorate.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
- In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork, then stir in oil, vinegar, and vanilla extract. When dry ingredients are thoroughly moistened, pour in cold water and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan.
- Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in center comes out clean. Cool on a rack.

- Combine the figs, apricots, raisins, rum, orange zest, and lemon zest in small bowl; cover with plastic wrap and let sit at room temperature for at least 4 hours or as long as overnight.
- Heat oven to 350°F Grease the bottom and sides of a 12 1/4" x 4 1/4" x 2 3/4" loaf pan with butter and dust all over with flour; tap out excess flour and set aside.
- Combine butter and sugar in a large bowl and beat with a handheld mixer set to medium speed until the mixture is pale and fluffy, 1-2 minutes. Add the eggs one at a time, beating well after each addition. Add the reserved fruit-rum mixture and the flour mixture and mix on low speed until just combined.
- Transfer batter to prepared pan and smooth the top with a rubber spatula. Bake until a toothpick inserted into the middle of the cake comes out clean, 40-45 minutes. Unmold cake onto a wire rack and let cool completely before slicing.
