This is a recipe my mother made in the 1950's. I have tried many other date bar recipes but none compare to this one.

Steps:
- Combine the flour, soda, salt, oats, oleo, and sugar into a crumb-like mixture; spread 1/2 of mixture in a greased 13x9 pan.
- Combine the filling ingredients together, except the vanilla.
- Cook this mixture until thick.
- Cool. Now add the vanilla.
- Spread on crumb crust, put the other 1/2 of the oat mixture on top of the date mixture.
- Bake at 350°F for 45 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
- To make filling: In a small saucepan, combine dates, brown sugar, and water. Bring to a boil and cook, stirring constantly for 10 minutes. Remove from heat.
- To make the crust: Combine flour, oats, brown sugar, baking powder, and salt in large bowl. Cut in shortening until mixture becomes crumbly. Press half of crust evenly into baking pan. Spread date mixture over the top. Crumble remaining crust mixture over the top of date mixture.
- Bake 20 to 25 minutes. Let cool on wire racks before cutting into bars.

DATE BARS
Similar to fig newtons but with dates! It uses honey to sweeten it instead of sugar which compliments the dates nicely. This recipe is from the American Wholefoods Cuisine cookbook.

Steps:
- Preheat oven to 350°F.
- Combine flour, oats, baking soda and salt. Stir in oil and honey until well blended together.
- Combine dates and water and simmer in a saucepan for about 5 minutes until soft and thick.
- Stir in honey.
- Pat only half of the crust into a greased 8x8 square pan making a thin layer all the way to the edges.
- Spread date filling over the crust smoothing it out so it covers all of the crust beneath it.
- Pat the remaining crust out on wax paper and transfer ontop of the date filling, remove wax paper.
- Bake for 20-25 minutes untili firm and golden.
- Cool in pan.
- Cut in small squares to serve. Enjoy!

Steps:
- Preheat oven to 350°F (175°C).
- Butter and line with parchment a 9 x 13 inch baking pan.
- Beat butter in medium bowl.
- Gradually add sugar and beat until combined (mixture will appear grainy).
- Add eggs, one at a time, beating well after each addition.
- Stir in milk and vanilla.
- Combine flour, baking powder, salt and cinnamon in small bowl.
- Add to butter mixture and stir until just blended.
- Mix dates and walnuts gently into batter.
- Transfer batter to pan; smooth top.
- Bake until top is brown and tester comes out clean (with a few moist crumbs attached), about 35 minutes.
- Cool 10 minutes.
- Run knife around edge of pan to loosen.
- Reverse carefully onto cookie sheet.
- Peel off parchment.
- Invert again.
- Cool. Cut into bars.
- Sift icing sugar over.

DATE LOAF BARS
I love dates, and so I love to try anything with them in it. These were gobbled up even by kids....not sure if they knew what dates were!

Steps:
- Combine the dates, 1 cup sugar, and water in a medium saucepan. Bring to a boil; reduce heat, and simmer uncovered, for 10 minutes or until thickened, stirring frequently. Remove from the heat, and let cool.
- Combine the flour and the next 4 ingredients in a large bowl, stirring well. Add butter and vanilla, stirring well.
- Press half of the oat mixture into a greased and floured 13 x 9x 2 inch pan. Pour the cooled date mixture over the crust. Crumble the remaining half of the oat mixture over the date mixture.
- Bake at 350 degrees for 30 minutes or until set and lightly browned. Let it cool on a wire rack. Cover and chill until it is firm.
- Cut into bars; gently roll the bars in powdered sugar.

- Heat the oven to 180C/160C fan/gas 4. Butter a 2lb loaf tin (ours was 22 x 10cm and 6cm deep) and line with baking parchment. Put the butter, dates and bicarbonate of soda (which helps break down the dates) in a large bowl and add 150ml boiling water. Give it a stir so the butter melts, and leave to stand for around 20 mins until the dates have softened.
- Whisk in the sugar until smooth, then gradually whisk in the eggs until combined. Beat in the baking powder, flour and a pinch of sea salt until there are no lumps of flour left and it's smooth. Fold in three-quarters of the walnuts, then pour into the prepared tin. Sprinkle the remaining walnuts over the top.
- Bake for 20 mins, then turn the oven down to 170C/150C fan/gas 3 and cook for another 45-50 mins until golden brown and a skewer inserted into the centre comes out clean. Leave the cake to cool in the tin for 15 mins, then transfer to a cooling rack to cool completely. Lightly dust with the icing sugar and serve in slices. Freeze whole or cut into slices, then place in an airtight container or divide between reusable freezer bags. Can be frozen for up to three months. Defrost thoroughly overnight.

This recipe for golden, chewy, date-and-walnut-packed bars comes from the Los Angeles pastry chef Margarita Manzke, who grew up in the Philippines and now runs the sweet side of the kitchen at République. When she was in high school, Manzke came across the classic recipe for "food for the gods" in a thin pamphlet of Filipino desserts, and she made the bars again and again, learning how to produce a consistently tender, chewy batch: Don't overcream the butter, and don't use a light hand with the dates. Manzke sells fresh bars at République, but know that at home the cooled, cut bars store well in the freezer, ready to pop out and defrost at a moment's notice.

- Heat the oven to 325, and line a 13-by-18-inch sheet pan with parchment paper. Whisk together the flour, baking powder, baking soda and salt in a large bowl until well mixed and no lumps remain. Tip about 1/2 cup of the flour mixture into a medium bowl; add the dates, and toss well to coat, breaking up the dates as you go. Set aside.
- In a stand mixer fitted with the paddle attachment, cream the butter with both sugars just until smoothly incorporated, about 2 minutes on medium speed. Add the eggs in 3 batches, mixing well each time and scraping down the sides of the bowl and the paddle between additions.
- Add the flour mixture and date mixture, and mix gently on low just until incorporated. Remove the bowl from the mixer, and use a spatula to fold in the walnuts. Transfer the mixture to the parchment-lined sheet pan, and use an offset spatula to spread it in an even layer, pushing it into the edges and corners and smoothing the surface. Bake until brown and set, about 45 minutes.
- Cool completely in the pan, then remove and cut into squares. Serve right away, or store in an airtight container for up to 5 days.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.

- Preheat the oven to 350 degrees F, then grease & line (with parchment) a 7"x11" cake pan.
- Combine the dates & orange juice in a saucepan & bring to a boil before turning the heat down to low ~ Cover the saucepan & simmer gently for 5 minutes to soften the dates.
- Remove from the heat & mash the date mixture until smooth, then set aside to cool.
- In a mixing bowl, beat together the butter & sugar, then stir in the oats & flour to form a crumbly mixture.
- Press half of this mixture into the base of the prepared pan to form a smooth base, then use a fork to prick the base all over.
- Bake for 10-12 minutes or until lightly golden.
- Spread the date paste over the cooked base & sprinkle the remaining crumbly mixture over that as a topping.
- Return to the oven & bake for another 30 minutes or until lightly golden.
- Remove from the oven, cut into 12 bars & allow to cool in the pan on a wire rack.
- Great served either warm or cold.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- For the date filling; in a saucepan combine chopped dates, sugar, water and orange juice, bring to a boil and cook, stirring with wooden spoon over medium-low heat until mixture is thickened, pushing down with a fork or a potato masher to remove the large chunks and make the mixture semi-smooth, cooking time should take about 15-20 minutes)set aside.
- For the crust; in a large bowl combine the cake mix with oatmeal, cinnamon and brown sugar.
- In a small bowl whisk together melted butter with egg and vanilla; add to the flour mixture; using clean hands mix with fingers until the mixture barely holds together.
- Measure out two-thirds of the mixture and pat into the bottom of prepared baking dish, pressing down with hands to cover evenly.
- Carefully spread the prepared date mixture over the bottom crust, spreading out to cover the pan.
- Cover the top with remaining oat mixture and gently pat the mixture down slightly with hands (do not pat down to much!).
- Bake for about 20 minutes (the top should be very light brown).
- Cool completely or semi-freeze before cutting (this will make slicing the bars easier).
