Steps:
- Cook dates with milk 20 minutes in double boiler; Strain, rub through sieve, and add eggs, salt and a few gratings of nutmeg.
- Line plate with Plain Pastry and build up a fluted rim; Pour filling into crust.
- Bake 10 minutes in hot oven (450F), then reduce heat to moderate (350F), and bake until firm when tested with silver knife.

- preheat oven to 350 grease and flour a 9" pie dish with the butter and 1 tsp flour combine sugar, 3 tbsp flour and baking powder in a small dish, set aside put dates and remaining flour in a small bowl, stirring to coat.
- add walnuts, set aside in a medium bowl add eggs and beat well stir in date mixture, stir in flour/sugar mixture until well combined pour into prepared pie dish and bake 30-35 minutes until a toothpick inserted in center comes out clean serve warm or at room temperature.

- Combine sour cream, sugar, salt, nutmeg, eggs, and brandy.
- Beat until smooth.
- Add the dates and nuts and blend well.
- Pour into pie shell.
- Bake in a 425 degree F.
- oven for 10 minutes, then reduce heat to 325 degrees F.

ANGELLE'S DATES AND CREAM PIE
Steps:
- Crust Preparation: Preheat oven to 350 degrees F
- Process graham crackers in food processor until fine crumbs. Put in bowl and mix in chopped pecans, butter and salt. Pat into 9-inch pie pan. Pre-bake crust on bottom third rack of oven for 12 minutes
- Date layer preparation: Coarsely chop dates, then saute dates in butter for several minutes until caramelized; sprinkle with salt. In food processor, pulse pineapple and 2 tablespoons heavy cream
- Add dates and process again until chunky.
- Cream Layer preparation: Mix sour cream, sugar and vanilla until well incorporated.
- Assembly: Spread Date mixture evenly over pre-baked crust. Spread cream layer evenly over date mixture. Bake in middle of oven for 25 minutes at 350 degrees F until filling jiggles only slightly in the middle. Cool immediately in refrigerator or on dry ice at least 40 minutes until filling has cooled down and set.
- Whipped Cream preparation: Whip cream, vanilla and sugar until semi-firm peaks form.
- Topping/Garnish preparation: Spread a 1/4-inch layer of whipped cream over top of pie. Slice dates and roll in sugar. Garnish pie with sliced dates, chopped roasted pecans, and pipe remaining whipped cream decoratively.
BRANDIED DATE AND WALNUT PIE

- Preheat oven to 375°F. Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Fold edge under; crimp. Pierce crust all over with fork. Freeze 10 minutes. Line with foil; fill with dried beans or pie weights.
- Bake crust until sides are set, about 15 minutes. Remove foil and beans. Bake until bottom begins to color, piercing with toothpick if crust bubbles, about 10 minutes longer. Cool on rack 10 minutes.
- Meanwhile, stir dates and brandy in small bowl to blend. Mix brown sugar, butter, nutmeg and salt in medium bowl until paste forms. Whisk in corn syrup, then 3 eggs. Add nuts and date mixture. Beat 1 egg to blend in small bowl for glaze.
- Brush inside of crust with some of glaze. Pour filling into crust. Bake 15 minutes. Cover edges of crust with foil. Continue to bake pie until filling is puffed and set in center, about 20 minutes. Transfer pie to rack; cool. (Can be prepared 1 day ahead. Let stand at room temperature.)
- Serve pie with whipped cream.

Steps:
- Grind pecans, walnuts, and dates in a food processor until well chopped and blended. Add honey and continue to process until the mix forms a ball. Be careful not to overprocess.
- Pie Crust:.
- Press into bottom and sides of a pie pan before adding filling. Reserve some of the mix to crumble on top of finished pie. Fresh fruit makes a great filling, also a yogurt or tofu "cheesecake" is yummy!
- Balls:.
- Use as is or add 1 teaspoons cinnamon and/or 1/2 teaspoons nutmeg or 1 tbls. carob powder or 1-2 tbls. orange zest.
- Roll the dough into balls, then in flaked coconut, ground nuts or carob powder. Have fun and enjoy!
GOOSEBERRY DATE PIE
An alternative method for this pie would be to use Recipe #106232 instead of whipped cream. From the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Chilling time not included in preparation time.

Steps:
- Wash and pick over goosberries; add 1 3/4 cups sugar and water.
- Cover and simmer until tender.
- Drain, reserving juice.
- Measure 2 cups of berries and add to dates.
- Mix together remaining sugar, cinnamon, calt and cornstarch.
- Add 1 cup of gooseberry juice and cook until thick and clear.
- Add gooseberries and dates; gently stir and cool.
- When cool, pour int baked pastry shell and garnish with sweetened whipped cream.

MALTESE WALNUT AND DATES PIE
A great pie to celebrate St Martin's feast in November

- Chop the dates in small pieces and put in a saucepan.
- Add 3 tablespoons water and put on a moderate heat, till they start melting. You have to be very careful, because the dates should not melt completely.
- Lower heat. Add the walnuts, Anisette and finely chopped rind of 1 tangerine. Blend well.
- Remove from heat and put in a bowl and put aside to cool.
- When completely cold, fill the pastry case with this filling. Smooth the top.
- Decorate with the extra walnuts.

- Remove top 2 sheets of plastic wrap; let dough stand 1 minute or until pliable. Fit dough, plastic-wrap side up, into a 9-inch pie plate coated with cooking spray. Remove remaining plastic wrap. Press dough into bottom and up sides of pan. Fold edges under; flute.
