Steps:

  • Preheat oven to 400 degrees F. Cut a slit in each date. Place almonds inside slits. Press together the dates to close slits. Wrap each date with a piece of bacon.
  • Line a shallow baking pan with Reynolds Wrap® Aluminum Foil. Add a roasting rack; place the dates on rack. Roast for 15 to 20 minutes or until bacon is crisp. Serve immediately with toothpicks. Dates will be hot inside.

  • Preheat the oven to 400 degrees F.
  • Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.
  • Place the bacon-wrapped dates on a baking sheet. Bake until the bacon is crisp, 15 to 20 minutes.

  • Microwave bacon for about 2 minutes, until partially cooked, but not browned.
  • Wrap each date with a strip of bacon and secure with a wooden toothpick.
  • Broil on low 3 minutes, turn dates, and continue broiling 3 to 4 minutes longer, or until browned.
  • Drain on paper towel and serve warm.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

  • Using a paring knife, slice through the top half of each medjool date, then pull the two sides apart to expose the pit. Do not slice all the way through. Discard the pit, and also check the inside to make sure there are no signs of bugs or black mold (very rare, but important to check).
  • Stuff each date with about a tablespoon of goat cheese. I find this easiest to do by using a butter knife to carve out a hunk of cold goat cheese and pressing it in, using the knife.
  • Cut the bacon slices in half, then wrap each date with a bacon half, securing with a toothpick by pushing it through the entire piece.
