AMY'S QUICK KIELBASA SKILLET DINNER
I made this up one night when I needed a quick dinner, and it has since become one of our favorite meals! Pull some kielbasa and diced hash browns out of your freezer, open up a can of corn, and poof! you have a tasty dinner!

Steps:
- Combine frozen potatoes and sliced kielbasa in a large skillet, and cook on medium heat until potatoes are done.
- After potatoes are done and kielbasa is beginning to brown, stir in the corn, and cook until heated through.

KIELBASA CORNBREAD
Corn bread flavored with garlic sausage, green onions and chedder cheese. Using a corn muffin mix adds a little sweetness to offset the other flavors and make this a simple, quick and easy dish.

Steps:
- Preheat oven to 400°F.
- Grease an 11x7x1 1/2 inch baking pan.
- Combine muffin mix, cheese and onion.
- Stir in, but do not over mix, egg, then milk, then kielbasa.
- Spoon into the prepared pan and bake for 30 minutes or until an inserted toothpick comes out clean.
POLISH KIELBASA WITH POTATOES AND CORN
Steps:
- Cut potatoes into small to medium chunks; place them in skillet with oil. Season potatoes with salt and pepper as desired.
- Add diced onion and cook on medium heat. Cut sausage into small chunks and place into skillet when potatoes are almost done.
- When everything in the skillet is hot, open can of corn and stir in with potatoes and sausage. Let all ingredients get hot and serve.

CHEESY HASH BROWNS AND KIELBASA SOUP (CROCK POT)
When my mom first gave me this recipe, I was pretty skeptical - but it became an instant favorite in our house!! I like it because it is fast and simple to make, inexpensive, and reheats very well. I'll post the ingredients for the original version and offer the healthier alternatives at the end of the recipe.

Steps:
- In crock pot, combine hash browns, kielbasa, broth and onions. Stir well and cook on low 6-8 hours.
- 30 minutes before serving, cut cheese into cubes and stir into soup. Cover and cook on high 30 minutes or until cheese is melted.
- We like this soup pretty thick, but if you prefer a thinner soup now is a good time to add some extra broth or milk. Wait until after the cheese has melted to add extra liquid so you can be sure of the consistency.
- Serve hot with crusty bread!
- To make this recipe A LOT healthier, use turkey kielbasa, fat free/low sodium chicken broth, and Light Velveeta. I routinely use these substitutions and the soup still turns out fantastic! If I have the time, I do like to remove the casings from the turkey kielbasa as I think they tend to get a little chewy when cooked all day. Just split them carefully with a knife and peel away the casings before chopping. Enjoy!

This is a simple dinner my husband came up with when I was on bed rest. It is now his "signature dish" and the whole family loves it! Even better the next day!

- In a large skillet saute onion until translucent.
- Add Worcestershire sauce, balsamic vinegar, water, and brown sugar. Stir until sugar dissolves.
- Add Kielbasa.
- Cover and simmer for about 30 minutes, stirring occasionally.
- Mix the 1/4 cup cold water with the 1 tablespoon of corn starch in a small glass until smooth.
- Add cornstarch mixture to the skillet, stir well and remove from heat. Sauce will thicken as it stands.
- Serve over pasta or as an appetizer with toothpicks.
