Turkey Sausage and Peppers image

Steps:

  • Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
  • Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.

2 tablespoons extra-virgin olive oil
3 assorted bell peppers, thinly sliced
1 bulb fennel, trimmed and chopped
1 large onion, cut into wedges

3 cloves garlic, minced

1/2 teaspoon fennel seeds (optional)
1 15-ounce can no-salt-added diced tomatoes
12 basil leaves, chopped, plus more for topping

Juicy turkey sausage? Impossible! But it's true - I've worked out a way to add moisture and keep turkey sausage nice and juicy. Try it and see. Just don't use the extra lean ground turkey - it's much too lean. Note: times do not include letting the sausage set overnight.

Steps:

  • Crumble ground turkey into a large mixing bowl.
  • Tear bread into large pieces and place in food processor. Add onions and all seasonings. Pulse until everything is in uniform crumbs. Add chicken broth and pulse until combined. The amount of broth will depend on the dryness of your bread - it should have the consistency of oatmeal. (And yes, it looks pretty disgusting).
  • Add bread mixture to the turkey in the bowl and combine thoroughly (I use my hands for this). Cover and refrigerate overnight to let flavors blend.
  • Heat olive oil in skillet. Shape sausage into 16 patties and fry until cooked through.

Day-After-Thanksgiving Turkey and Sausage Gumbo image

Steps:

  • To make the roux, in a large Dutch oven over medium heat, combine the oil and flour. Cook, stirring constantly until becomes a reddish-brown color, approximately for 30 to 40 minutes. Be careful not to burn.
  • Add to the roux the onions, bell pepper and celery, stirring, about 5 minutes; add broth. Bring to a boil, stirring to incorporate roux, then reduce heat and simmer for 1 hour. Add salt, pepper and cayenne. Add turkey and sausage then simmer an additional 30 minutes. Should the gumbo become too thick, thin with additional broth or water. Skim from the top any fat that surfaces.
  • Add the green onions and the parsley. Serve over hot rice.
