DEBBIE'S CHALUPA DIP

This is a recipe that I adopted from the Zaar account. It's a lot like a layered dip that my family has always made.

Steps:

  • Mash avocados with lemon juice, salt and pepper until smooth.
  • In separate bowl, mix sour cream with mayonnaise and taco seasoning mix.
  • In loaf pan, layer beans, avocado mix, sour cream mix, onions, tomatoes and cheese.

1 (16 ounce) can refried beans
3 avocados
1/2 cup mayonnaise
2 teaspoons lemon juice
1 (1 1/4 ounce) packet taco seasoning mix
1/2 teaspoon salt
1/2 cup green onion (chopped)
1/4 teaspoon pepper
3 tomatoes (chopped or drained)
8 ounces sour cream
8 ounces cheddar cheese (grated)

DEBBIE'S DIVINE DESSERT

When Debbie first described this dessert to me she didn't call it divine. She said it was... well, a more R-rated adjective. And it was. Debbie's original recipe calls for canned peaches, but I used sour cherries, and used the drained juice to make cherry vanilla ice cream which I served with the hot pudding. It was absolutely.... divine!

Steps:

  • Preheat the oven to 350 degrees F. (170 C).
  • Mix together the flour, sugar, baking powder, eggs, salt, milk and melted butter (OIL).
  • Pour into a greased 8" x 8" baking pan.
  • Top with the sliced fruit.
  • Bake for approximately one hour.
  • While the cake is baking, bring the sugar and cream to a boil, making sure that all the sugar is dissolved.
  • Immediately after taking the cake out of the oven, stab it all over (done best to the soundtrack of Psycho).
  • Pour the cream sauce over the cake and serve.
  • Best served warm, so if you don't serve this right away reheat gently.

1 cup sugar
1 teaspoon baking powder
2 eggs
1 pinch salt
1/4 cup milk
3 tablespoons melted butter (I used canola oil)
1 (15 ounce) can fruit, drained
1 cup whipping cream
4 tablespoons sugar

DEBBIE'S TACO DIP

Stand back and watch it disappear! People eat this stuff up so fast...and they go wild for the avacados. If you're not into fat-free or light, feel free to use the full fat options.

Steps:

  • Spread refried beans on a pizza pan.
  • Sprinkle with 1/3 of taco seasoning.
  • Spread mashed avacados over bean layer.
  • Sprinkle with 1/3 of taco seasoning.
  • Spread sour cream over avacado layer.
  • Sprinkle with 1/3 of taco seasoning.
  • Sprinkle cheeses evenly over sour cream layer.
  • Top with black olive slices and diced tomatoes if you choose.
  • Serve with tortilla chips.
