DECADENT BRIE MACARONI & CHEESE EN CROUTE
Ooh la la is right... these are so good! They're buttery, flaky pillows of warm gooey cheese goodness. The mac and cheese itself is rich and decadent. The buttery crust tastes almost sweet next to the savory mac and cheese. These are very filling. Great for a brunch or a light dinner with a salad.

Steps:
- 1. To make the mac & cheese you first start with a roux. In a large non-stick pot heat the olive oil at medium high heat then add flour and heat until bubbly, continue to cook like this for two minutes.
- 2. Add the heated chicken broth all at once and whisk, continue whisking while simmering for 2 or 3 minutes.
- 3. Then add 1 cup of milk and simmer for 2 or 3 minutes.
- 4. Add the Dijon mustard and cheese.
- 5. Stir until cheese is melted, remove from heat.
- 6. Add the prepared macaroni and stir to combine.
- 7. Spread the mac & cheese into a greased 13x9 inch pan and refrigerate until firm.
- 8. Preheat oven to 400 degrees and prepare a large baking sheet with parchment.
- 9. When the mac & cheese is firm divide into 12 portions.
- 10. In a small bowl thoroughly combine the eggs and 2 tablespoons of milk, this will be used to seal the puff pastry.
- 11. The build: On a lightly floured surface lay down a sheet of puff pastry 6x9 inch. Center a portion of the mac & cheese on the pastry.
- 12. Fold the longest part of the pastry to meet at the top of the mac & cheese, wet your fingers with the egg wash and seal the bottom flap, it will overlap by about an inch.
- 13. At the unsealed sides of the puff pastry wrap like a gift.
- 14. Seal with the egg wash.
- 15. Place on a baking sheet seam side down and brush the top with the egg wash. Repeat with the other 11 portions.
- 16. Bake at 400 degrees for 25 minutes and serve.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Whisk egg and water together to make egg wash.
- Roll out puff pastry gently to a 14-inch square. Trim corners with a knife or pizza cutter to make a circle. Spread apricot preserves over the pastry, leaving a 1-inch margin around the edge. Sprinkle cranberries and almonds over the pastry, and place Brie cheese in the center.
- Brush the edges of the pastry with some of the egg wash. Fold top and bottom of pastry over the dough; trim 2 inches off each edge. Fold remaining pastry on top to cover the Brie cheese completely. Press the seams with your fingers to seal. Remove any excess apricot preserves that leaks out.
- Transfer wrapped cheese, seam-side down, to baking sheet. Brush top with egg wash.
- Bake in the preheated oven until top is golden brown, about 20 minutes. Let stand before serving, about 30 minutes.

HOLIDAY BRIE EN CROUTE
Steps:
- Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry to within 2 inches of the edge. Sprinkle with the cranberries and almonds. Place the cheese in the center of the pastry. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto a baking sheet. Decorate with the pastry scraps, if desired. Brush with the egg mixture.
- Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.
DECADENT BRIE EN CROUTE
Great appetizer. Looks nice garnished with grapes or you can slice off chunks and serve with a nice green salad. For best results put Brie in freezer for one hour.

Steps:
- Preheat oven to 350 and spray 3-quart gratin pan with non-stick cooking spray.
- Place cheeses side by side in a prepared 3-quart gratin pan, about 2 inches apart.
- Twist bread dough around cheese.
- Sprinkle Frangelico on top of cheese and top with brown sugar and nuts.
- Bake at 350 for 28 to 33 minutes. If nuts start to get too brown, cover very loosely with a small piece of aluminim foil.
- Allow to rest 10 minutes prior to serving.

- Carefully slice the rind off the top of the brie round (it's OK if there is some left on). In a small bowl, make the egg wash by beating the egg with 1 tablespoon water with a fork or whisk until it's very smooth. Set aside.
- Lay the puff pastry sheet out on a piece of parchment paper. Use a rolling pin to roll out the seams and make it as square as possible (but don't roll it out much bigger than it already is). Use a sharp knife or pizza cutter to cut the corners off so it's a circle (reserve the scraps). Place the cranberry sauce (1/3 cup) in the center of the circle and spread out so it's about 4.5-5 inches in diameter. Place the 8 oz. Brie round cut side down on top of the cranberry sauce. Fold the sides of the circle up to meet in the center, going around in one direction, until the brie is completely covered. Press the seam together as best you can (don't worry if it doesn't stick together perfectly and if it looks a little messy!) and flip over so the smooth side is up in the center of the parchment paper. - Use a pastry brush to brush the top and sides of the puff pastry wrapped brie with the egg wash. Optional: Use a sharp knife to cut leaves and roll berries out of the scraps of puff pastry. If you like, you can score lines for the veins of the leaves. Place them on top of the wrapped brie and press down gently to adhere them to the egg on top. Brush the tops of the leaves and berries with egg wash.
