BREAKFAST MELTS

My husband loves these, they are nice for a brunch with the girlfriends or a quick warm treat that can be reheated all morning!

Breakfast Melts image

Steps:

  • Cut bread into 20 1/4-inch slices. Arrange slices on a baking stone.
  • Cook Bacon and crumble.
  • Chop onion, bell pepper, mushrooms & Sun Dried Tomatoes and put in small bowl. Add 1/8 c of cheese and bacon.
  • In another bowl, crack eggs and add whipping cream and whisk. Spray Pam on frying pan and heat on medium for 1 minute.
  • Add chopped ingredients to egg mixture and whisk again. Add to pan. Cook "making scrambled eggs".
  • Divide egg mixture (after cooked) evenly among bread slices. Divide 2 cups of cheese evenly over the 20 pieces.
  • Bake 15-18 minutes or until golden brown. Serve hot.

8 extra large eggs
1/4 cup whipping cream
1/8 cup green bell pepper (finely chopped)
1/8 cup mushroom (finely chopped)
1/8 cup onion (finely chopped)
2 tablespoons sun-dried tomatoes (smoked preferred and finely chopped)
1/8 cup bacon (crumbled)
1/8 cup Mexican blend cheese (4 cheese mexican blend, shredded)
2 cups Mexican blend cheese (4 cheese mexican blend, shredded)

BREAKFAST MELT

Here's a wonderful, inexpensive breakfast that will stick to your ribs! This has something for everyone! It takes no time to fix and the whole family will love it! Note**I am terrible about not looking for sizes on foods,so I'm guestimating the amount of sausage. I just see the Jimmy Dean package of sausage and go! So you may have some leftover sausage, I believe, though it's either 1/2-3/4 lb.

Steps:

  • Take sausage and form 4 large patties. Cook sausage and put aside.
  • Crack eggs into skillet, make sure to break the yolks. Cook and then put aside.
  • Butter one side of each slice of bread. Put a slice of bread in skillet, butter down, then place the ingredients as follows: cheese, sausage, egg, cheese and the other slice of bread, buttered side up. Cook and flip and cook until cheese is melted.

Steps:

  • Thaw broccoli in microwave oven or at room temperature, drain well on paper towels.
  • Place muffins on baking sheet, broil turning once, until lightly toasted.
  • Remove and turn cut side up.
  • Top each with slice of ham and tomato, top with broccoli.
  • Sprinkle with cheese.
  • Broil for 3 minutes or until cheese is melted and bubbly.

1 cup frozen small broccoli floret
2 English muffins, halved
2 slices ham, halved or 2 tablespoons bacon bits
4 slices tomatoes
1 cup shredded cheddar cheese or mozzarella cheese

Steps:

  • In a small bowl, dissolve the yeast and sugar in 1/2 cup warm water. In a large bowl, mix remaining 3 1/2 cups warm water, honey, molasses, oil, eggs and lemon juice. Mix well. Add yeast mixture and stir.
  • Gradually add 5 cups whole wheat flour beating well after each addition. Add the flax, cracked wheat and sunflower seeds, stir well.
  • Let stand for 20 minutes, until mixture is very light. Stir in salt and the rest of the flours until dough pulls away from the sides of the bowl.
  • Knead 10 to 15 minutes until dough is smooth and elastic. Put into a greased bowl and cover, let rise in the oven with light on until doubled, about 1 hour.
  • Punch down and shape into 6 round balls. Cover and let rest for 20 minutes.
  • Form into loaves and let rise covered in oven until doubled. Bake at 375 degrees F (190 degrees C) 25-35 minutes.

Out of my desire to provide a protein-filled breakfast to guests and my family who was quickly growing from twin boys + one, I needed a quick make-ahead breakfast recipe. I found a few breakfast casserole recipes in my search and made them simpler and revised it so you can change them up depending upon the guests you may have. If you need a vegetarian casserole or have sausage on hand instead of bacon it's super simple to omit & replace with different ingredients that are sure to please! I make 2 kinds at the same time so everyone can pick their favorite!

Dee Anne's Breakfast Casseroles image

Steps:

  • Cut bacon up in small pieces (or break sausage up) cook in pan, drain on paper towel & set aside.
  • Preheat oven to 350 degrees.
  • Grease 9x13 casserole dish.
  • Place a layer of potatoes on the bottom of the dish and sprinkle with salt, pepper, onion powder, & garlic powder. Add rest of the potatoes and repeat sprinkling -- Adjust amounts of seasoning to taste.
  • Place bacon (or sausage)**, and cheese on top of potatoes.
  • In a mixing bowl whisk eggs together, add milk and whisk until incorporated. Pour evenly over top of layers.
  • Bake uncovered for about 1 1/2 hours or more - until liquid is gone.
  • **To make a Veggie Version I omit the bacon (or sausage) & add:.
  • Chopped Onion.
  • Chopped Red Pepper.
  • Chopped Mushrooms.
  • Make it ahead and cut into squares to place into zip lock bags to freeze.
  • For a quick breakfast microwave & Enjoy!
