ROMAN-STYLE CHICKEN
Giada De Laurentiis' Roman-Style Chicken, from Everyday Italian on Food Network, is the perfect make-ahead recipe; it tastes even better reheated the next day.

Steps:
- Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.
- Keeping the same pan over medium heat, add the peppers and prosciutto and cook until the peppers have browned and the prosciutto is crisp, about 5 minutes. Add the garlic and cook for 1 minute. Add the tomatoes, wine, and herbs. Using a wooden spoon, scrape the browned bits off the bottom of the pan. Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.
- If serving immediately, add the capers and the parsley. Stir to combine and serve. If making ahead of time, transfer the chicken and sauce to a storage container, cool, and refrigerate. The next day, reheat the chicken to a simmer over medium heat. Stir in the capers and the parsley and serve.
DIABETIC CHICKEN ROMANO
Steps:
- 1. Preheat oven to 400 degrees F. Lightly coat a 15x10 in. baking pan with nonstick cooking spray; set aside.
- 2. Place each piece of chicken between two pieces of plastic wrap.
- 3. Using the flat side of a meat mallet, pound chicken lightly until about 1/2 inch thick. Remove plastic wrap. Set aside.
- 4. In a shallow dish use a fork to beat together egg white and the water. In another shallow dish combine crushed cornflakes, the 2 tablespoons grated cheese, the Italian seasoning, and 1/8 teaspoon ground black pepper.
- 5. Dip chicken pieces, one at a time, into egg mixture; dip into cornflake mixture, turning to coat. Place coated chicken in the prepared baking pan. Bake about 18 minutes or until chicken is tender and no longer pink.
- 6. Meanwhile, cook spaghetti according to package directions; drain. In a small saucepan cook pasta sauce until heated through, stirring occasionally.
- 7. To serve, divide cooked spaghetti among four serving plates. Top with chicken and pasta sauce. If desired, sprinkle with additional cheese and/or parsley.

- 1. Set up your Dredging Station One for seasoned flour , one for the egg mixture and one for the breadcrumbs. Take your Chicken Breast and Slice through the middle to make it thinner and almost like you were butter flying it but its all the way through. take a large piece cling wrap and lap it down add a tiny bit of water so it doesn't stick , lay chicken down cover with other end of wrap and pound chicken fillets thin , do all of them before you start to dredge.
- 2. To Dredge: Do flour, Egg, then Bread crumbs Shake lightly to get off excess. Heat Pan with the oil , when hot add chicken and brown golden , ( doesn't take too long) set aside when all done . Take the butter and add to pan melt, add, lemon juice and mix together ,add Zest and let cook for 10 minutes . remove from heat. place on platter pour lemon sauce over chicken add lemon slices for garnish. enjoy.

Transfer to a 13-in. x 9-in. baking dish coated with cooking spray; sprinkle with salt., In the same skillet, saute mushrooms in butter until tender.
