CHEESY POTATOES AU GRATIN
Recipe from New Orleans Cooking by Emeril Lagasse. Simple and tasty side dish. Did add a couple of extra spices as the recipe seemed to be bland with just salt & pepper. The additions of garlic & onion powder seemed to make a difference in the layers.

Steps:
- Preheat oven to 400 degrees.
- Lightly grease a medium gratin dish with butter.
- Cover the bottom of the pan with an overlapping layer of potatoes.
- Lightly season with salt, pepper, garlic powder, and onion powder and top with a sprinkling of cheese (about 2 tablespoons).
- Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top.
- Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream.
- Cover with aluminum foil and bake until the cheese is absorbed into the potatoes and the potatoes are tender when pierced with a knife, about 50 minutes.
- Remove the foil and bake until the mixture is bubbly and the top is golden brown, about 10 minutes.
- Remove from the oven and let rest 10 minutes before cutting into portions.
DOUBLE CHEESY AU GRATIN POTATOES
Potatoes cooked in heavy cream with Parm cheese, topped with Cheddar cheese. Not for those on a low fat diet! I never use measurements, so go with your gut!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
- Layer potato slices in prepared baking dish. Pour cream over potatoes; sprinkle with Parmesan cheese. Season potatoes with salt and pepper.
- Bake in preheated oven until potatoes are soft, about 1 hour. Remove from oven; gently stir potatoes. Sprinkle with the Cheddar cheese; cover and let rest until cheese is melted, about 5 minutes.

CHEESY POTATOES GRATIN

- Preheat the oven to 375 degrees F.
- Melt the butter in a large saucepan over medium heat. Add the onions, then season with salt and cook until the onions are soft and very aromatic, 5 to 7 minutes. Add the garlic and cook for another 2 to 3 minutes. Whisk in the flour and cook until the roux is the consistency of wet sand, 3 to 4 minutes. Whisk in the milk, bring to a boil and cook for 5 to 6 minutes. Turn off the heat and whisk in the mustard and cheeses. Season with salt to taste to make sure it is delicious!
- Place a quarter of the potatoes in the bottom of a 9-by-13-inch baking dish. Ladle a quarter of the cheese sauce evenly over the potatoes. Repeat this process 3 or 4 more times with the remaining potatoes and sauce, pushing down the potatoes between each layer and topping with the sauce. Place the baking dish on a sheet tray lined with foil. Bake, rotating the dish halfway through, until the potatoes are soft when poked with a fork, 50 to 60 minutes. Tent with foil if the top is getting too brown.
- Let sit for 15 to 20 minutes before serving.
- Hot cheesy potatoes!

- Place a layer of peeled and sliced potatoes on the bottom of a deep casserole dish.
- Next, sprinkle chopped onions, then bacon, then thin slices of butter, enough to cover the potatoes. Then crush 1/4 of the stack of Ritz crackers on top of this and then pour 1/4 cup of milk evenly over this. Place slices of Velveeta evenly over this.
- Repeat all steps until casserole is filled.
- Bake at 350° for 40-60 minutes, covered.

DOUBLE CHEESE POTATOES AU GRATIN
I created this the other night, because I wanted some potatoes au gratin. So I used the ingredients I had on hand. This is a great base recipe, I think I might add bacon next time, and just use bacon grease instead of butter. Or some other suggestions would be; ham, mushrooms, onions, peppers etc. I hope you enjoy it, if anyone make any additions or changes tell me in your review.

Steps:
- Melt butter over medium heat in a saucepan, incorporate the flour with a whisk. Cook for 2-3 minutes.
- Whisk the milk in slowly, stirring briskly, cook till starts to thicken.
- Slice the potatoes about an 1/8 inch thick with food processor or mandoline.
- Pour a little sauce in a casserole dish, spread it all over.
- Make a layer with the potatoes, then sprinkle on the Swiss cheese. Continue to make layers with potatoes sauce, cheese, salt and pepper, alternating between Swiss and Parmesan, end with parmesan cheese.
- When done press down some sauce should come up.
- Cover with with foil and cook for 40-60 minutes.
- When it is done a knife should insert easily.
- When it is done take off the foil and turn on the broiler, and broil till the gratin is browned.
- Rest for 10-20 minutes. Resist the urge to dig in or it will not be set.
